Amazing Roasted Chicken and Veggies Recipe (costs less than $5 to feed my family of 6)!!!
Roast Chicken with Carrots and Potatoes Ingredients 1 Whole Chicken (Price Chopper, $1.19/lb) 3-5 Cloves of Garlic 1/2 Onion, large chop Salt, Pepper and Garlic Powder 1 tbsp Olive Oil 1 tbsp Butter 2 cups yellow or red potato 2 cups carrots (Baby carrots whole or 1/4 inch chopped carrot) Directions Rub Chicken with Olive Oil and butter mixture and season raw Chicken with salt, pepper and garlic powder (my favorite Chicken Seasoning is Johnny’s!) Place Chicken in a roasting pan or dutch oven with 1 sliced onion, 4-5 cloves of garlic and 4-5 sprigs of Thyme (optional). Do NOT add any water to the bottom of the pan! Bake…

Campbell’s Pot Roast with Veggies Ingredients: Pot Roast 2 cups carrots Organic Carrots, chopped (or whole baby carrots) 2 cups Potatoes, chopped 1 cup onion, chopped 3 cloves garlic, whole 1/2 cup flour 1 can Campbells Cream of Mushroom (or Cream of Chicken Soup) Salt and pepper Directions: Pat pot roast dry and rub down with flour, salt and pepper. Drizzle olive oil in a saute pan and bring to temperature. Once olive oil is hot add pot roast. Brown on all sides for about 2 minutes on each side. Sea Salt Fudge Bites Ingredients 1 1/2 cups granulated sugar 2/3 cup (5 fl.-oz. can) Evaporated Milk 2 tablespoons butter or margarine 1/4 teaspoon salt 2 cups miniature marshmallows 1 1/2 cups (9 oz.) Semi-Sweet Chocolate Morsels 1/2 cup chopped pecans or walnuts (optional) 1 teaspoon vanilla extract 1/2 tsp sea salt Directions LINE 8-inch-square baking pan with foil. COMBINE sugar, evaporated milk, butter and salt in medium, heavy-duty saucepan. Bring to a full rolling boil over medium heat, stirring constantly. Boil, stirring constantly, for 4 to 5 minutes. Remove from heat. STIR in marshmallows, morsels, nuts and vanilla extract. Stir vigorously for 1 minute or until marshmallows are melted. Ham Bone Soup with White Beans Ingredients: 1 ham bone, with some meat still on it 1 cup ham, chopped 3 cans chicken broth 3 cups water 2 cups northern white beans 1 onion, chopped 3 stalks of celery, chopped 3 large carrots, chopped 4 cloves garlic, chopped 2 large sweet potatoes, chopped Salt and pepper 2 tbsp butter Directions: In a large pot or dutch oven pour 3 cans of chicken broth, 1 cup water and beans. Ingredients: 2 ½ cups Rice Krispies 2 cups quick oats ½ cup additional goodies (i.e. shredded coconut, chopped nuts, craisins or other goodies) ½ cup honey ½ cup brown sugar ¼ teaspoon salt 2/3 cup peanut butter (we have also used Nutella) 1 teaspoon vanilla extract ½ cup chocolate chips (you can add a little more or less) DIRECTIONS: Combine first 4 dry ingredients in a bowl. In a saucepan, mix honey, brown sugar and salt. Over medium-low heat, stir continuously until the mixture comes to a complete boil for 30-60 seconds. Summer Fish Tacos Ingredients 1-2 lb of very fresh fish fillets (Mahi Mahi, Tillapia, Halibut…) 1 lemon Salt and pepper Olive oil 1 dozen corn tortillas (3 tortillas per person) Vegetable oil or butter Salsa (I like to make a mango salsa with this dish!) 1 ripe Avocado optional Cabbage optional Cider vinegar Salt Directions Prepare the salsa.
