Dinner tonight…BBQ Country Style Pork (melts in your mouth) Corn on the Cob and Bush’s Baked Beans!
Dinner tonight is a super easy one but amazingly delicious!!! We are eating Country Style BBQ Pork (that will simply melt in your mouth), Corn on the Cob (of course…it’s in season and super duper cheap!) and Bush’s Baked Beans. Now I have to be honest we don’t leave our Bush’s beans all natural…I add about 1 tbsp of mustard and 1 tbsp of brown sugar…if that tastes about right we are good (occasionally I will add in some other seasonings) If you are looking for some dinner inspiration there is still time to make this dinner…tonight! Dinner Tonight! Chicken Enchilada/Tortilla Soup…YUM!
Chicken Enchilada SoupIngredients: 1 can black beans, drained and rinsed 1 can corn, drained 2 cans diced tomatoes (14.5 oz) 1/2 cup onion, diced 2 garlic cloves, minced 1 packet enchilada sauce (I used 2 tbsp taco seasoning…since I buy in bulk at Costco) 1 can Chicken Broth 2 cans ( 10 3/4 oz) cream of chicken soup 1/2 cup milk 3-4 boneless chicken breasts (I used boneless chicken thighs) 1/4 cup fresh cilantro 2 tbsp juice of a lime 1-2 chili peppers diced, optional if you want spice Optional Toppings: Cheese, Sour Cream, Avocado, tortilla chips (see below) Tortilla Chip Strips Take 3-4 corn tortillas and slice them into long strips. Last night I came up with a recipe for what I am going to call a Southwest Quinoa Chicken and Corn Chili…and it was AMAZING!!! My husband and kids just ate it up like it was dessert! The funny thing is that the whole time it was cooking my husband kept saying “I am scared” (because he has never had quinoa before) but is seriously turned out great!!! Yum Num Num…made my husband Biscuits and Gravy this morning and it was seriously AMAZING and so very easy (and fast even!) Here is the recipe… Ingredients: Crumble sausage (or Jimmy Deans roll sausage…crumble while cooking) 1/2 cup onion 1/2 cup flour 1 tbsp butter (optional) 2 cups milk Salt, Pepper, Garlic Powder (to taste) Directions: In a saute pan cook sausage (crumble while cooking). Once about half way cooked add diced onion and finish cooking until sausage is all the way done and the onions are translucent. Add flour (I add butter before adding flour to make a better rue). Mix until all blended well together. Stir in milk gradually…
