Fish sticks are an easy dinner staple in our house. There are so many easy healthy dinners that I can whip up for my family in a jiffy! That’s why I am so excited that Gorton’s has released a new product called Artisan Fillets. There are 5 new flavors to choose from: Roasted Garlic & Italian Herb, Lemon & Cracked Peppercorn, Southwest Tortilla and Southern Style varieties.
I tried out all 5 flavors and each one was unique in taste and delicious. I especially loved the Southwest Tortilla Artisan Fillets in my Crunchy Fish Taco with Pineapple Cole Slaw and a Spicy Mayo drizzle. It was seriously amazing! The fillets are very easy to cook, just 20-25 minutes in the oven, they come out crisp and melt in your mouth. To make the taco I simply took the Artisan Fillet placed in the soft corn tortilla, with homemade Pineapple Cole Slaw (recipe below) and a spicy mayo drizzle. So easy and absolutely delicious. My whole family loved them and I got 2 thumbs up (or Gorton’s got 2 thumbs up)!!!

Pineapple Coleslaw Recipe
Ingredients:
- 1 bag of plain coleslaw cabbage mix
- 1/4 cup finely chopped Pineapple
- 2 tbsp Apple Cider Vinegar
- 1 cup Mayonnaise
- 2 tbsp Sugar
- Salt and Pepper to taste
Directions:
- In a separate bowl combine all ingredients, excluding cabbage blend. Mix pineapple, apple cider vinegar, sugar, and mayonnaise together, stir well.
- Pour mixture over coleslaw cabbage in a medium sized bowl. Mix well. Salt and pepper to taste.
- Cover and refrigerate for 2-4 hours. The mixture will look dry, however as it sits the wet ingredients will stretch and become very wet and moist. DO NOT ADD more wet ingredients or it will become soggy!

I tried the Southwest fillets for dinner tonight, It’s too hot for the oven, so I pan fried them in avocado oil at 450 degrees for about 12 minutes. They were fast crispy and delicious with avocados and salsa on a salad. Next time they’re going in a fish taco.
