BBQ Pulled Pork Recipe

Ingredients:

  • 1-2 lbs Pork Loin
  • 2 cups Sweet Baby Rays BBQ Sauce
  • 2 TBSP Brown Sugar
  • 1 TBSP Apple Cider Vinegar
  • 2 Cloves Garlic
  • Salt, Pepper, Olive Oil

Instructions:

  1. Preheat oven to 325 degrees.
  2. Salt and pepper pork loin and drizzle with olive oil. Cut garlic and put around the pork loin. Cover pork loin with foil and cook for 4 hours or until internal temperature is 145 degrees.
  3. Remove pork loin from oven and it should fall apart with the simple touch of a fork. Shred pork loin. Mix in 2 TBSP of Brown Sugar into shredded pork, along with salt and pepper. Add BBQ sauce and apple cider vinegar and mix well. Place in oven on low heat for approximately 30 minutes (or until flavors are thoroughly combined).
  4. Serve on a soft roll or bun. Enjoy 🙂

pineapple coleslaw

Pineapple Coleslaw Recipe

Ingredients:

  • 1 bag of plain coleslaw cabbage mix
  • 1/4 cup finely chopped Pineapple
  • 2 tbsp Apple Cider Vinegar
  • 1 cup Mayonnaise
  • 2 tbsp Sugar
  • Salt and Pepper to taste

Instructions:

  1. In a separate bowl combine all ingredients, excluding cabbage blend. Mix pineapple, apple cider vinegar, sugar,  and mayonnaise together, stir well.
  2. Pour mixture over coleslaw cabbage in a medium sized bowl. Mix well. Salt and pepper to taste.
  3. Cover and refrigerate for 2-4 hours. The mixture will look dry, however as it sits the wet ingredients will stretch and become very wet and moist. DO NOT ADD more wet ingredients or it will become soggy!
