Buckeyes Chocolate Peanut Butter Balls (Keto Friendly)
Who doesn’t just LOVE Chocolate and Peanut Butter together? These Buckeye dessert treats are one of my favorites to make with my kids. They are so incredibly easy to make and never last long! If you are looking for an easy no bake cookie for the next holiday cookie exchange, or a tasty treat to make for a friend – these Buckeye Chocolate Peanut Butter Balls are absolutely PERFECT!!!
Even better you can totally make this recipe Keto friendly! I recently started Keto and am so excited that I can take one of my favorite treats and eat it on a diet! Simply substitute the powdered sugar for Swerve confectioners sugar (I recommend using only 1/4 cup of your sugar substitute) and use semi sweet chocolate morsels.
Ingredients
- 1 1/2 cups peanut butter
- 1 stick butter
- 1 tsp vanilla
- 1 cup powdered sugar
- 2 cups chocolate chips
- Toothpick
Directions
- Using a stand mixer (or hand mixer) mix peanut butter and butter together for approximately 1 minute. Add vanilla and powdered sugar and mix on low until smooth.
- Using your hands, roll into like sized balls (about 1 inch is perfect) and set aside in the freezer for at least 1 hour.
- Pour chocolate in a narrow – deep bowl and microwave for 50 seconds. You will want to mix in 10-15 second intervals, stirring until melted.
- Using a toothpick dip the chilled peanut butter balls into the melted chocolate and set aside on wax paper.
- Refrigerate for at least 1 hour or until chocolate is fully set.
