Zuppa Toscana Soup Ingredients 1 pound Italian sausage 1/2 teaspoon red pepper flakes 1 large white onion, diced 3 large Russet potatoes, peeled and chopped 4 slices bacon chopped 3 cloves garlic, minced 8 cups chicken broth 2 cups Water 1 cup Heavy cream 3 cups Kale, washed and roughly chopped Salt and pepper, to taste Parmigiano Cheese Directions 1. Roasted Veggies and Chicken Ingredients 3 large thighs or chicken breasts (I prefer dark meat) 2 cups asparagus, cut into halves 1 cup broccoli florets 1 cup cauliflower, cut into bite size pieces 2-3 white or red potatoes, halved (quartered if large) 1/2 onion, chopped into large pieces 2 tbsp olive oil 2-3 cloves garlic, diced Kosher Salt and pepper 1 cup parmigiana cheese (optional) (Vegetables you roast are optional, I chose veggies that are currently in season and at their lowest cost!) Sea Salt Fudge Bites Ingredients 1 1/2 cups granulated sugar 2/3 cup (5 fl.-oz. can) Evaporated Milk 2 tablespoons butter or margarine 1/4 teaspoon salt 2 cups miniature marshmallows 1 1/2 cups (9 oz.) Semi-Sweet Chocolate Morsels 1/2 cup chopped pecans or walnuts (optional) 1 teaspoon vanilla extract 1/2 tsp sea salt Directions LINE 8-inch-square baking pan with foil. COMBINE sugar, evaporated milk, butter and salt in medium, heavy-duty saucepan. Bring to a full rolling boil over medium heat, stirring constantly. Boil, stirring constantly, for 4 to 5 minutes. Remove from heat. STIR in marshmallows, morsels, nuts and vanilla extract. Stir vigorously for 1 minute or until marshmallows are melted. This is pretty much my busiest “blogging” week of the year…with that said…dinners this week are gonna have to be fast and easy!!! I won’t have time to hang out in the kitchen and make extravagant meals for my family (except for on Thanksgiving…where I plan on cooking a feast!!!!)
