Thursday, October 20th: Campbell’s Pot Roast with Veggies Ingredients: Pot Roast (Albertsons BIGI sale, usually around $12.00 for 2) 2 cups carrots Organic Carrots, chopped (or whole baby carrots) (QFC, $1 each for 1 lb bag, or cheaper at Costco) 2 cups Potatoes, chopped (Albertsons, $1.99 for a 10 lb bag) 1 cup onion, chopped 3 cloves garlic, whole 1/2 cup flour 1 can Campbells Cream of Mushroom (or Cream of Chicken Soup) Salt and pepper Directions: Pat pot roast dry and rub down with flour, salt and pepper. Delicious Ground Turkey Meatloaf
Tuesday, October 18th: Ground Turkey Meatloaf Ingredients: 2 tbsp butter 1 cup onion, chopped 3 cloves garlic, minced 1 1/4 lbs ground turkey 1/2 cup breadcrumbs 1 egg (or 1/4 cup egg substitute) 3/4 cup Ketchup 2 teaspoons Worcestershire sauce 3/4 teaspoon salt 1/2 teaspoon black pepper Directions: Melt butter in a saute pan. Cook onion and garlic in melted butter for 5 minutes (until onions are transparent), stirring occasionally. Set aside mixture in a separate bowl. Combine turkey, bread crumbs, egg, 1/4 cup of the Ketchup, Worcestershire sauce, salt, and pepper with onion mixture. Press meatloaf into an 8×4-inch loaf pan. Spread remaining Ketchup on top. Thursday, October 13th: Cabbage and Kielbasa Soup Ingredients: 1 1/2 cup diced Kielbasa 1 head of cabbage chopped 2 cans of Chicken broth (or 2 cubes chicken bouillon) 2 cups of water 2-3 tbsp Butter Salt and Pepper 1 finely chopped onion 1 clove diced garlic Directions: Drizzle 2 tbsp Olive Oil in a Dutch Oven. I also factor in that most breakfast food items are free with coupons…so if you are couponing regularly you most likely are not paying for those. Finally, I do not account for lunch simply because lunches can also be couponed for Free or very close to it, as well as you can always eat left overs from the night before Good luck! Friday, October 7th: Brown Sugar and Apple Roasted Pork Loin (slow cooker) and Carrots Ingredients: 1 boneless pork loin roast, 2-3 pounds 2 clove garlic, halved salt and pepper garlic powder 1 1/3 cups brown sugar, divided 1 tablespoon Dijon mustard 1 tablespoon balsamic vinegar 1/2 apple, sliced 2 cups carrots Directions: Sprinkle with garlic powder, salt and pepper, then prick the roast all over with a fork or skewer. Thursday, October 6th: Homemade Mac & Cheese Ingredients: 1 box elbow noodles 4 tablespoons butter 4 tablespoons flour 1/4 teaspoon dry mustard Salt and pepper 1 1/2 cup milk 2 cups shredded sharp Cheddar cheese 3/4 cup breadcrumbs tossed with 2 tablespoons melted butter Directions: Cook macaroni following package directions. Drain in a colander and rinse with hot water; set aside. Pre-heat oven to 350 degrees. In a saucepan, melt 4 tablespoons of butter over medium-low heat. Stir flour into the butter until smooth and bubbly. Stir in the dry mustard, salt, and pepper. Wednesday, October 5th: Homemade Chicken Pot Pie Ingredients: 1-2 lb Chicken, cut into bite size pieces 2 cloves Garlic, minced Salt and Pepper 2 cups Frozen Veggies (or fresh steamed veggies will work too) 1 can Cream of Chicken Soup 1 cup Bisquick Mix 1/2 cup nonfat milk 1 egg Directions: Cut chicken into bite size pieces and saute with olive oil, garlic, salt and pepper, until fully cooked. Pre-Heat oven to 400 degrees. Mix vegetables, chicken and soup in ungreased glass pie plate, 9×1 1/4 inches. Make bisquick breading topping. Pour over top of vegetable and chicken mixture in pie plate. Bake for 30 minute or until golden brown.…

Tuesday, October 4th: Ground Turkey Tacos Ingredients: 1 package Ground Turkey Corn or flour Tortillas 1 cup chopped Onion 3 cloves Garlic, minced 1 tsp Cumin 1/2 tsp Chili Powder 1/4 cup Cilantro 2 tbsp Lime juice Romaine lettuce (optional) Sour Cream (optional) Cheese (optional) Avocado (optional) Salsa (optional) Directions: Drizzle olive oil in the bottom of the pan.
