Monday Meal Plan Idea: Baked Crispy Cornflake Chicken!!! Super cheap, healthy and delicious!!!
Monday, October 3rd: Baked Crispy Cornflake Chicken, Rice and Steamed Broccoli Ingredients: 4 lbs Chicken (I prefer drumsticks or a whole cut chicken) 1 cup flour 1 egg 1 cup milk 2 cups crushed Cornflakes, approx. 2/3 of a box (I prefer frosted flakes ) 1 cup all purpose flour Salt and pepper (and/or your favorite poultry seasoning…mine is Johnny’s seasoning) 1 cup whole milk (or 2% milk will work) 4 tbsp Butter, melted Rice 3 cups Broccoli Directions: Pre-Heat oven to 350 degrees. (3) Fresh corn on the cob (cut off the stalk) 2-3 stalks of celery, chopped 1 cup finely chopped onion 2 cloves garlic, finely chopped 1/2 cup Sweet Red Pepper 1 cup potatoes, chopped 1/2 cup carrot, chopped 5 slices of bacon, cut into 1/2 inch pieces 1 pint 2% milk or Coconut milk (unflavored) 1/2 cup butter 3 tbsp flour Sour cream (optional) Cheddar Cheese (optional) Directions: Saute diced bacon over medium heat until just before crispy; remove bacon and place on a paper towel. I think its about time I talk a little about having a Freezer stockpile…When the price of meat goes down to a rock bottom price or whenever you see a great deal on discount (manager special) meats…buy them and put them in the freezer for when there’s a “bad” week. Ground Turkey Meatballs with Feta and Italian Tomato Sauce Ingredients: 1 lb Jennie-O Ground Turkey 1 cup Feta Cheese 1/2 cup chopped Cilantro 3/4 cup finely chopped Onion 1 Can Italian Tomatoes (optional) 1 Bay Leaf (optional) 1/2 cup diced colored Sweet Peppers 1/4 cup Balsamic Vinegar 2 tbsp Brown Sugar Directions: Pre-Heat oven to 350 Degrees F. Prepare sauce first. Drizzle 1 tbsp olive oil in a saute pan. Saute 1/4 cup finely chopped onion and diced Sweet Peppers.
