Chicken Salad with Apples and Cranberries
Chicken Salad is such a classic meal. It’s easy to make, delicious, healthy and totally kid friendly! There are so many different ways to enjoy Chicken Salad, on a sandwich, with crackers, a la carte – the options are endless. This specific recipe is my favorite. I love the sweetness of the cranberries and apples mixed with the savory chicken and celery!
Ingredients:
- 3 cups diced cooked chicken
- 1/4 cup dried cranberries
- 1/2 cup diced celery
- 2 tablespoons finely chopped red onion (optional for kids)
- 1/2 cup diced apple
- 1/4 cup chopped walnuts or pecans
- 5 tablespoons mayonnaise
- 2 teaspoons lemon juice
- 1/4 teaspoon salt
- 1/8 teaspoon ground black pepper
Directions:
- Combine chicken, cranberries, celery, onion, apple, and walnuts (or pecans) in a bowl.
- In a separate small bowl mix mayonnaise, lemon juice, and salt and pepper.
- Add wet ingredients to chicken mixture and stir well. Add more mayonnaise and seasoning to taste if needed.
- Serve alone in a plastic container or on a sandwich. You can also use a bento box container with crackers for an easy kids school lunch.
