Chicken Salad with Apples and Cranberries

Chicken Salad

Chicken Salad is such a classic meal. It’s easy to make, delicious, healthy and totally kid friendly! There are so many different ways to enjoy Chicken Salad, on a sandwich, with crackers, a la carte – the options are endless. This specific recipe is my favorite. I love the sweetness of the cranberries and apples mixed with the savory chicken and celery!

Ingredients:

  • 3 cups diced cooked chicken
  • 1/4 cup dried cranberries
  • 1/2 cup diced celery
  • 2 tablespoons finely chopped red onion (optional for kids)
  • 1/2 cup diced apple
  • 1/4 cup chopped walnuts or pecans
  • 5 tablespoons mayonnaise
  • 2 teaspoons lemon juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper

Kid Friendly Chicken Salad

Directions: 

  1. Combine chicken, cranberries, celery, onion, apple, and walnuts (or pecans) in a bowl.
  2. In a separate small bowl mix mayonnaise, lemon juice, and salt and pepper.
  3. Add wet ingredients to chicken mixture and stir well.  Add more mayonnaise and seasoning to taste if needed.
  4. Serve alone in a plastic container or on a sandwich. You can also use a bento box container with crackers for an easy kids school lunch.
