Recipe type: Soup
Serves: 4 servings
Ingredients
- 4 cups Beef Broth
- 1 Red Onion, thinly sliced into thin rings
- 3 Sweet White Onion, thinly sliced in rings
- Stale or Toasted French Bread, cut into large 2×2 croutons
- Provolone Cheese, sliced
- 1½ cup Red Wine (any cheap wine will work)
- 3-4 Tbsp Butter
- 1-2 Tbsp white sugar
- Salt and Pepper
- Olive Oil
Instructions
- Preheat oven to broil.
- In a Dutch oven or large pot, saute onions in olive oil with salt, pepper and white sugar. Cook until onions are half way cooked.
- Add butter to sauteed onions and finish cooking until translucent.
- Add beef broth, and wine to onion mixture. Let simmer for about 30 minutes. This will allow all of the alcohol to cook out of the soup.
- Transfer soup into oven safe bowls, add a few crouton/bread pieces on top and cover with 1-2 slices of provolone cheese.
- Broil in the oven for 3-4 minutes or until cheese if fully melted and golden brown.
- Carefully remove from oven let sit for just a minute and serve hot. Bon Appetite!
