Easy Authentic Chicken Pad Thai Recipe
I am a Thai food maniac! Honestly I could eat Thai Food every single day. The only thing is I am kind of picky – my Thai food has to taste authentic. Because I am so picky I have been hesitant to make my own Chicken Pad Thai at home. Well not anymore my mom and I spent some time over Christmas break playing around and came up with this insanely simple and affordable recipe for Easy Authentic Chicken Pad Thai!
Ingredients
- 1 package Pad Thai Noodles
- 1.5-2 lbs Chicken Breast, Tenders or Thighs
- 5-6 TBSP Thai Kitchen Pad Thai Sauce
- 1/4 cup Green Onion
- 1 egg, scrambled
- 1-2 Lime, juiced
- Garnish: crushed peanuts, green onions and cilantro
Directions
- Boil water in a medium sized pot. Turn off heat and add Pad Thai noodles. Allow to soak for approximately 10 minutes.
- Cook chicken in 1 tsp olive oil, 1 tsp lime juice, salt and pepper.
- Drain noodles and place in a saute pan. Slather noodles with Pad Thai sauce. Then add green onions, eggs, chicken and add more lime juice to taste. Saute all ingredients together on low-medium heat for approximately 3-5 minutes until all flavors have merged.
- Top each serving with crushed peanuts, cilantro and green onions. YUM!!!!
