Easy Cheap Delicious and Healthy Dinner!!! YUMMMMMM
This is pretty much my busiest “blogging” week of the year…with that said…dinners this week are gonna have to be fast and easy!!! I won’t have time to hang out in the kitchen and make extravagant meals for my family (except for on Thanksgiving…where I plan on cooking a feast!!!!)
Here is one of my fastest-easiest and yummiest meals I make…it is also probably one of the cheapest meal out there!!!
Roasted Chicken with carrots and potatoes!!!
Just take a whole fryer chicken (I bought several when they were less than $0.60/lb and put them in my freezer) and drizzle olive oil over the top of the bird…then season with salt and pepper! Finally, take a handful of garlic cloves and 1/2 cup of o
Cover with foil and place in the oven at 350 degrees F and cook for about 3 hours (or until golden brown) then add about 2 cups of peeled baby carrots and about 2 cups of quartered yellow (or red) potatoes and 1/2 onion roughly chopped…cook for about 45 minutes more. When it’s done the veggies will be tender and the chicken looks as if it is falling off the bone.
