Ok you asked so here it is!!! 8/14 thru 8/19 Weekly Meal Plan!!!
Monday 8/15: Pot Roast with Carrots, Potatoes and Salad
- Pot Roast (Safeway BIGI sale, usually around $12.00 for 2)
- Organic Carrots (Safeway, $0.99/each for 1 lb bag, or cheaper at Costco)
- *Potatoes (you may have some at home, if not pick some up at Costco they have the best price or Fred Meyers, 2 lbs/$1.00)
- Salad (Romaine $0.99 each at Safeway or cheaper at Costco)
Tuesday 8/16: Rack of Pork Ribs, Corn on the Cob and Ceasar Salad
- Pork Ribs (QFC B1G1 sale, $3.99/lb approx $10.00 for 2)
Use (2) $2/1 Fresh or Previously Frozen Pork Ribs - Corn on the Cob (Fred Meyer, 5 for $2.00)
- Salad (Romaine $0.99 each at Safeway or cheaper at Costco)
Total Cost for Meal: Approx. $6.00 (depending on the size/cost of your Ribs). Plus you will have an extra Rack of Ribs for another time!
- Roast Chicken from your Freezer Stockpile, (Fred Meyers $0.99/lb) or take it easy tonight and buy a pre-cooked Whole Chicken (QFC $4.99/each)
- Potato Salad (make from ingredients in stockpile)
- Peaches Cobbler (Fred Meyer $0.98/lb buy 2 lbs)
Thursday 8/18: Sausage Spaghetti and Salad
- Johnsonville Sausage
Buy (2) $3.99 each
Use $0.55/1 Johnsonville Breakfast Sausage 8/14/2011 SS Insert (exp 9/30/2011)
and $1/1 Johnsonville Brat or Sausage Burgers SavingStar (via rebate, sign up here)

Total OOP: $1.89 for (2) plus add 1 package of Sausage to your Freezer Stockpile! - Spaghetti Noodles (from Stock Pile or if you must buy some now Albertsons Brand is $1.00)
- Spaghetti Sauce (from stock pile or make fresh)
Friday 8/19: Left overs or Pizza night!!!
Recipes for this weeks meals:
Pot Roast
Ingredients
- Pot Roast
- 1 Can Cream of Mushroom
- 3 cups of Carrots
- 2 cups of Potatoes
- 1 Onion Diced
- 3-5 Cloves of Garlic
- Salt, Pepper and Garlic Powder
1. Season with Salt, Pepper and a pinch of Garlic Powder. Pan sear in a saute pan, until brown on all sides with 1 onion sliced and 3-5 Garlic cloves finely diced.
2. Place in the oven (324 degrees) or crock pot (high).
3. Add 1 can of Cream of Mushroom (or Cream of Chicken) on top of Roast.
4. Let cook for approx. 4 hours, then add 3 cups cut carrots and 2 cups potato. Add another pinch of salt and pepper.
5. Continue to cook for approximately 1 hour more.
6. Serve once Pot Roast is tender and falling apart and Veggies are tender.
Rack of Ribs
Ingredients
- 1 Rack of Ribs
- 1 bottle of your favorite BBQ Sauce
- 3-5 cloves Garlic
- Salt, Pepper and Garlic Powder
1. Cut rack into 3-4 sections and place in a pot of boiling water with 3-5 cloves of garlic. Boil for approximately 1 hour.
2. Season boiled ribs with Salt and Pepper.
3. Slather Ribs with BBQ Sauce.
4. BBQ (or cook in the oven for approx. 1 hour)
Roast Chicken
Ingredients
- 1 Whole Chicken
- 3-5 Cloves of Garlic
- 1 Onion
- Salt, Pepper and Garlic Powder
- 3 Sprigs of Thyme
1. Rub Chicken with 2 tbsp Olive Oil and season raw Chicken with salt, pepper and garlic powder.
2. Place Chicken in a roasting pan or dutch oven with 1 sliced onion, 4-5 cloves of garlic and 4-5 sprigs of Thyme.
3. Bake at 350 degrees for approximately 3.5 hours or until Chicken is falling off the bone.
Easy Peach Cobbler
Ingredients
- 1/2 cup butter, melted
- 4 cups fresh peaches – peeled and sliced (blanch whole peaches in boiling water for 2 min and the peel will come right off!!)
- 1 cup white sugar
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 1 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg (optional)
- 1/2 cup milk
Directions
- Preheat oven to 350 degrees F. Pour butter in the bottom of a large casserole dish.
- Toss together the peaches and 2 tablespoons sugar.
- In a mixing bowl, combine the 1 cup sugar, salt, baking powder, flour, cinnamon, nutmeg and milk. Spoon batter over the peaches.
- Bake for 45 minutes in the preheated oven, or until top is golden brown.
Spaghetti Sauce
Ingredients
- 1 Onion, finely diced
- 5 Cloves of Garlic, finely diced
- 1/2 cup Orange/Yellow Bell Pepper, diced
- 1 can Italian Tomatoes
- 1 can Tomato Sauce
- 1 Tbsp Worcestershire Sauce
- 1/2 Tbsp of Tabasco Sauce
Directions
1. Sautee onions, peppers and garlic in a pan until onions are transparent.
2. Add 1 can of Tomato Sauce and 1 can of Italian Tomatoes to pan. Add Worcestershire Sauce and Tabasco Sauce. Let simmer for 10 minutes.
3. Add Sausage to sauce and let simmer for another 10 minutes.
