Roasted Vegetable & Chicken Linguine

If you LOVE vegetables like me than you are going to love this Roasted Vegetable & Chicken Linguine. Loaded with tons of tasty veggies this pasta is always a huge hit!

Ingredients

2 Chicken Breasts
1 cup Sugar Snap Peas
1 cup Baby Carrots
1/2 cup diced Red Onion
4-5 chopped cloves Garlic
1 cup Spinach
1 cup Cauliflower Florets
3/4 package dried Linguine pasta noodles
Olive Oil
Salt and Pepper
Grated Parmesan Cheese, optional

Directions

  1. In a large pot bring water to a boil and add linguine noodles. Cook until soft.
  2. Preheat oven to 400 degrees.
  3. Saute chicken in a dab of olive oil. Season with salt and pepper. Once chicken is cooked remove from pan and set aside.

  4. Place cauliflower, sugar snap peas and carrots on a baking tray. Drizzle with olive oil, season with salt and pepper and roast in oven for 10 minutes.
  5. Using the pan that the chicken was cooked in, add onions and garlic. Saute until nearly transparent.
  6. Add all roasted vegetables and spinach to saute pan.
  7. Mix in cooked linguine and stir together over low heat for 2-3 minutes. Season with a touch more of salt and pepper.
  8. Serve and top with freshly grated Parmesan cheese.
