Roasted Vegetable & Chicken Linguine
If you LOVE vegetables like me than you are going to love this Roasted Vegetable & Chicken Linguine. Loaded with tons of tasty veggies this pasta is always a huge hit!
Ingredients
2 Chicken Breasts
1 cup Sugar Snap Peas
1 cup Baby Carrots
1/2 cup diced Red Onion
4-5 chopped cloves Garlic
1 cup Spinach
1 cup Cauliflower Florets
3/4 package dried Linguine pasta noodles
Olive Oil
Salt and Pepper
Grated Parmesan Cheese, optional
Directions
- In a large pot bring water to a boil and add linguine noodles. Cook until soft.
- Preheat oven to 400 degrees.
- Saute chicken in a dab of olive oil. Season with salt and pepper. Once chicken is cooked remove from pan and set aside.
- Place cauliflower, sugar snap peas and carrots on a baking tray. Drizzle with olive oil, season with salt and pepper and roast in oven for 10 minutes.
- Using the pan that the chicken was cooked in, add onions and garlic. Saute until nearly transparent.
- Add all roasted vegetables and spinach to saute pan.
- Mix in cooked linguine and stir together over low heat for 2-3 minutes. Season with a touch more of salt and pepper.
- Serve and top with freshly grated Parmesan cheese.
