Super Moist Banana Bread
Can I just say that love banana bread! I love that it is sweet, delicious, healthy and oh did I say delicious?!?! Plus it’s a great way to use up those banana’s before they go to waste. This specific recipe is my favorite as it uses applesauce instead of oil making it even healthier and tasty!
Ingredients
2 1/4 cups all-purpose flour
1 cup white sugar
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1 tsp baking soda
2 eggs
1/3 cup applesauce
4 ripe bananas, mashed
1 TBSP vanilla extract
1 cup chopped walnuts (optional)
Directions
- Preheat oven to 350 degrees.
- Using a large bowl, mix flour, white sugar, baking soda, cinnamon and nutmeg. Stir in eggs, vanilla extract, applesauce and mashed banana’s.
- Gently fold in walnuts (if desired). Pour batter into a lightly buttered pan.
- Bake for 45 minutes (or until a knife comes out clean).

I substituted the all purpose flour with coconut flour. Took me a minute to figure out the conversion on that one. But it smells and looks delicious. I can’t wait to eat it.
