Monday Meal Plan: Beef and Veggie Stew…this is a family favorite!!!
Beef and Vegetable Stew (crock pot recipe) Ingredients: 1-2 lbs stewing beef, cut into cubes. 5-6 white potatoes (I actually prefer sweet potatoes instead) 2-3 carrots, chopped 1 small onion, chopped 2-3 celery stalks, chopped 1 cup corn (frozen or canned) 2 cans beef broth 1 can Italian tomatoes 1 cup water 2 tbsp soy sauce 1 tsp Tabasco sauce 1 tsp Worcestershire sauce 2 tbsp butter or olive oil 2 cloves garlic, minced Kosher salt and pepper Directions: Cut beef into 1 inch cubes. Ham Bone Soup with White Beans Ingredients: 1 ham bone, with some meat still on it 1 cup ham, chopped 3 cans chicken broth 3 cups water 2 cups northern white beans 1 onion, chopped 3 stalks of celery, chopped 3 large carrots, chopped 4 cloves garlic, chopped 2 large sweet potatoes, chopped Salt and pepper 2 tbsp butter Directions: In a large pot or dutch oven pour 3 cans of chicken broth, 1 cup water and beans. Succulent Eggplant Parmigiana Ingredients: 2 eggplant, sliced (about 1/2 inch thick) 2 eggs, beaten 4 cups Italian seasoned bread crumbs (or make your own with four pieces of toasted or stale bread, finely chopped in a food processor) 4 cups spaghetti sauce (jarred or homemade) 1 (16 ounce) package mozzarella cheese, sliced or shredded 1/2 cup grated Parmesan cheese Directions: Preheat oven to 350 degrees F. Slice eggplant, salt evenly on both sides and stack into a tower. Place a heavy plate on top of eggplant tower and let sit for 1 hour. Return and thoroughly rinse salt off eggplant. Roasted Chicken with Potatoes and Carrots Ingredients 1 Whole Chicken 3-5 Cloves of Garlic 1 Onion Salt, Pepper and Garlic Powder 3 Sprigs of Thyme (optional) Directions: Rub Chicken with 2 tbsp Olive Oil (and or butter) and season raw Chicken with salt, pepper and garlic powder (my favorite Chicken Seasoning is Johnny’s!) Place Chicken in a roasting pan or dutch oven with 1 sliced onion, 4-5 cloves of garlic and 4-5 sprigs of Thyme (optional). Do NOT add any water to the bottom of the pan! Bake at 350 degrees for approximately 3.5 hours, add carrots and potatoes and continue cooking for another 45 minutes. Prep Time: 5 minutes …

Delicious Ground Turkey Meatloaf
Tuesday, October 18th: Ground Turkey Meatloaf Ingredients: 2 tbsp butter 1 cup onion, chopped 3 cloves garlic, minced 1 1/4 lbs ground turkey 1/2 cup breadcrumbs 1 egg (or 1/4 cup egg substitute) 3/4 cup Ketchup 2 teaspoons Worcestershire sauce 3/4 teaspoon salt 1/2 teaspoon black pepper Directions: Melt butter in a saute pan. Cook onion and garlic in melted butter for 5 minutes (until onions are transparent), stirring occasionally. Set aside mixture in a separate bowl. Combine turkey, bread crumbs, egg, 1/4 cup of the Ketchup, Worcestershire sauce, salt, and pepper with onion mixture. Press meatloaf into an 8×4-inch loaf pan. Spread remaining Ketchup on top. Bake in a 350 degree oven for 50-55 minutes. (Internal temperature should reach 165 degrees.) Remove from oven and let stand 5 minutes before…

Thursday, October 13th: Cabbage and Kielbasa Soup Ingredients: 1 1/2 cup diced Kielbasa 1 head of cabbage chopped 2 cans of Chicken broth (or 2 cubes chicken bouillon) 2 cups of water 2-3 tbsp Butter Salt and Pepper 1 finely chopped onion 1 clove diced garlic Directions: Drizzle 2 tbsp Olive Oil in a Dutch Oven. This weeks meals should not cost you more than $30!!! I do take into account items you should have in your current stockpile or pantry (I call those staples). I also factor in that most breakfast food items are free with coupons…so if you are couponing regularly you most likely are not paying for those. Finally, I do not account for lunch simply because lunches can also be couponed for Free or very close to it, as well as you can always eat left overs from the night before Good luck! Thursday, October 6th: Homemade Mac & Cheese Ingredients: 1 box elbow noodles 4 tablespoons butter 4 tablespoons flour 1/4 teaspoon dry mustard Salt and pepper 1 1/2 cup milk 2 cups shredded sharp Cheddar cheese 3/4 cup breadcrumbs tossed with 2 tablespoons melted butter Directions: Cook macaroni following package directions. Drain in a colander and rinse with hot water; set aside. Pre-heat oven to 350 degrees. In a saucepan, melt 4 tablespoons of butter over medium-low heat.
