Ok so I am sitting here thinking about what to make for dinner…finally a thought came to me! (I know a rare occasion for me…lol) I have chicken breasts dethawed and lots of onions and colored peppers from Aldi’s (they are crazy cheap this week)!!! Ingredients: 2 cups frozen corn (I am using corn I froze from this summer!) 2-3 stalks of celery, chopped 1 cup finely chopped onion 2 cloves garlic, finely chopped 1/2 cup Sweet Red Pepper 1 cup potatoes, chopped 1/2 cup carrot, chopped 5 slices of bacon, cut into 1/2 inch pieces 1 pint 2% milk or Coconut milk (unflavored) 1/2 cup butter 3 tbsp flour Sour cream (optional) Cheddar Cheese (optional) Directions: Saute diced bacon over medium heat until just before crispy; remove bacon and place on a paper towel. Ground Turkey Burgers with Cilantro and Feta Cheese Ingredients: Ground Turkey (Super cheap at Safeway this week! See the deal HERE) Feta Cheese 1 bunch of Cilantro 1/2 cup finely diced Onion (preferably a sweet onion) Directions: Dice 1/2 cup onions. 1 cup Cilantro and 2 cloves garlic. Mix the above mixture and 1 cups Feta cheese into the ground turkey. Make sure to really mix it well! Season with salt and pepper. BBQ until fully cooked. Roasted Chicken with Potatoes and Carrots Ingredients 1 Whole Chicken 3-5 Cloves of Garlic 1 Onion Salt, Pepper and Garlic Powder 3 Sprigs of Thyme (optional) Directions: Rub Chicken with 2 tbsp Olive Oil (and or butter) and season raw Chicken with salt, pepper and garlic powder (my favorite Chicken Seasoning is Johnny’s!) Place Chicken in a roasting pan or dutch oven with 1 sliced onion, 4-5 cloves of garlic and 4-5 sprigs of Thyme (optional). Do NOT add any water to the bottom of the pan! Bake at 350 degrees for approximately 3.5 hours, add carrots and potatoes and continue cooking for another 45 minutes. Prep Time: 5 minutes …

This weeks meals should not cost you more than $30!!! I do take into account items you should have in your current stockpile or pantry (I call those staples). I also factor in that most breakfast food items are free with coupons…so if you are couponing regularly you most likely are not paying for those. Finally, I do not account for lunch simply because lunches can also be couponed for Free or very close to it, as well as you can always eat left overs from the night before Good luck!
