Roast Chicken with Carrots and Potatoes Ingredients 1 Whole Chicken (Price Chopper, $1.19/lb) 3-5 Cloves of Garlic 1/2 Onion, large chop Salt, Pepper and Garlic Powder 1 tbsp Olive Oil 1 tbsp Butter 4-5 sprigs of thyme (optional) 2 cups yellow or red potato 2 cups carrots (Baby carrots whole or 1/4 inch chopped carrot) Directions Rub Chicken with Olive Oil and butter mixture and season raw Chicken with salt, pepper and garlic powder (my favorite Chicken Seasoning is Johnny’s!) Taco Salad Ingredients 2 ripe tomatoes, diced 1 cup Cheddar, shredded 1 large onion, diced 1 bag of Fresh Express Salad Blend 1 lb lean ground turkey, browned, crumbled and drained 1 cup salad dressing 1 cup salsa Tortilla chips, to serve Directions: Combine the tomatoes, cheese, onion, lettuce, and ground beef in a large bowl. Succulent Eggplant Parmigiana Ingredients: 2 eggplant, sliced (about 1/2 inch thick) 2 eggs, beaten 4 cups Italian seasoned bread crumbs (or make your own with four pieces of toasted or stale bread, finely chopped in a food processor) 4 cups spaghetti sauce (jarred or homemade) 1 (16 ounce) package mozzarella cheese, sliced or shredded 1/2 cup grated Parmesan cheese Directions: Preheat oven to 350 degrees F.
