BBQ Pulled Pork Recipe Ingredients: 1-2 lbs Pork Loin 2 cups Sweet Baby Rays BBQ Sauce 2 TBSP Brown Sugar 1 TBSP Apple Cider Vinegar 2 Cloves Garlic Salt, Pepper, Olive Oil Instructions: Preheat oven to 325 degrees. Salt and pepper pork loin and drizzle with olive oil. Cut garlic and put around the pork loin. Cover pork loin with foil and cook for 4 hours or until internal temperature is 145 degrees. Salted Caramel Fudge Brownies Ingredients: 1 Box of your favorite brownie mix (I like Ghirardelli) 2 eggs Vegetable Oil Soft Caramel Spread Sea Salt Directions: You can mostly follow the direction on the boxed brownie mix you use. However I do make a few changes in order to make my brownies softer and more fudgey!!! First I use TWO eggs in my mix (most mixes only call for one) Only use about 1-2 TBSP of water (most call for about 1/4 cup) Keep the called vegetable oil amount the same (usually about 1/3 cup) Finally I cook for about 5-6 minutes LESS then the called cook time! Ham Bone Soup with White Beans Ingredients: 1 ham bone, with some meat still on it 1 cup ham, chopped 3 cans chicken broth 3 cups water 2 cups northern white beans 1 onion, chopped 3 stalks of celery, chopped 3 large carrots, chopped 4 cloves garlic, chopped 2 large sweet potatoes, chopped Salt and pepper 2 tbsp butter Directions: In a large pot or dutch oven pour 3 cans of chicken broth, 1 cup water and beans. Ingredients: 2 ½ cups Rice Krispies 2 cups quick oats ½ cup additional goodies (i.e. shredded coconut, chopped nuts, craisins or other goodies) ½ cup honey ½ cup brown sugar ¼ teaspoon salt 2/3 cup peanut butter (we have also used Nutella) 1 teaspoon vanilla extract ½ cup chocolate chips (you can add a little more or less) DIRECTIONS: Combine first 4 dry ingredients in a bowl. In a saucepan, mix honey, brown sugar and salt. Over medium-low heat, stir continuously until the mixture comes to a complete boil for 30-60 seconds. Chicken Cordon Bleu and Italian Hash Ingredients: 4-5 halved chicken breasts, pounded as thin as possible 3 cups bread crumbs 8 sprigs fresh thyme 3 cloves garlic, minced 2 tbsp butter 5 slices Prochutta Ham, or ham of choice 1-2 cups grated Gruyere Cheese 2 eggs 1/4 cup milk 2 cups flour Olive Oil Kosher Salt and Pepper Directions: Take a sheet of plastic wrap and loosely wrap chicken breast. Dinner tonight is a super easy one but amazingly delicious!!! We are eating Country Style BBQ Pork (that will simply melt in your mouth), Corn on the Cob (of course…it’s in season and super duper cheap!) and Bush’s Baked Beans. Now I have to be honest we don’t leave our Bush’s beans all natural…I add about 1 tbsp of mustard and 1 tbsp of brown sugar…if that tastes about right we are good (occasionally I will add in some other seasonings) If you are looking for some dinner inspiration there is still time to make this dinner…tonight!
