Monday: Summer Fish Tacos Ingredients 1-2 lb of very fresh fish fillets (Price Chopper Swai Fillets only $3.49/lb) 1 lemon (Price Chopper, $0.50 each) Salt and pepper Olive oil 1 dozen corn tortillas (3 tortillas per person) Vegetable oil or butter Salsa (I like to make a mango salsa with this dish!) 1 ripe Avocado optional ($0.50 each at Aldi) Cabbage optional (HyVee 2lb/$1.00) Cider vinegar Salt Directions Prepare the salsa. Fish Tacos Ingredients 1 lb of very fresh fish fillets (preferably halibut) 1 lemon Salt and pepper Olive oil 1 dozen corn tortillas (3 tortillas per person) Vegetable oil or butter Salsa (I like to make a mango salsa with this dish!) 1 ripe Avocado Cabbage Cider vinegar Salt Directions Prepare the salsa. Either use store bought or make your own. Prepare the cabbage and avocado. Thinly slice cabbage. Put in a small serving bowl. Sprinkle with cider vinegar (about a Tbsp) and salt (about a tsp). Taco Salad Ingredients 2 ripe tomatoes, diced 1 cup Cheddar, shredded 1 large onion, diced 1 bag of Fresh Express Salad Blend 1 lb lean ground turkey, browned, crumbled and drained 1 cup salad dressing 1 cup salsa Tortilla chips, to serve Directions: Combine the tomatoes, cheese, onion, lettuce, and ground beef in a large bowl. Add the salad dressing and mix well. Just before serving, add the taco chips, tossing to combine with other ingredients. Top each serving with salsa. Serve with tortilla chips.
