Tuesday Meal Plan: Ground Turkey Meatballs with Feta and Italian Tomato Sauce
Ground Turkey Meatballs with Feta and Italian Tomato Sauce
Ingredients:
1 lb Jennie-O Ground Turkey
1 cup Feta Cheese
1/2 cup chopped Cilantro
3/4 cup finely chopped Onion
1 Can Italian Tomatoes (optional)
1 Bay Leaf (optional)
1/2 cup diced colored Sweet Peppers
1/4 cup Balsamic Vinegar
2 tbsp Brown Sugar
Directions:
- Pre-Heat oven to 350 Degrees F.
- Prepare sauce first. Drizzle 1 tbsp olive oil in a saute pan. Saute 1/4 cup finely chopped onion and diced Sweet Peppers.
- Once onions are transparent add 1 can of Italian Tomatoes (or can Diced tomatoes and 1 Bay Leaf), Balsamic Vinegar and Brown Sugar. Let simmer for approximately 10 minutes.
- Meanwhile combine Ground Turkey, remaining onions and chopped cilantro together. Season with salt and pepper. Roll Ground Turkey mixture into 2 inch balls and place on a baking sheet.
- Using a spoon press a small indication into the meatballs. Fill the “hole” with Feta cheese. Repeat for all meatballs.
- Place in the oven and cook for approximately 25 minutes or until golden brown.
- Serve with Sauce. Enjoy!

1 Package Jennie-O Ground Turkey (Albertsons, on sale BOGO 2/$5.49)
1 Onion
1 Sweet Colored Pepper (QFC, $1 each)
1 Bunch Cilantro (should be around $0.69/bunch…cheapest in bulk at the business center Costco!)
Feta Cheese (I don’t see a great deal anywhere…but I recommend buying the bulk block from Costco…that is the cheapest by far!)
1 Can Italian Tomatoes (Hopefully you have these in your stockpile…if not try using overage or catalinas to pick them up)
Bay Leaf (optional)
1 can Diced Tomatoes (optional)
Approximate Cost of Meal: $6.00 or less (depending on what is in your current stockpile and which coupons/catalinas you currently have to use)
