Weekly Meal Plan 9/11 thru 9/15: Yum Yum Yum!!!
This weeks meals should not cost you more than $30!!! I do take into account items you should have in your current stockpile or pantry (I call those staples). I also factor in that most breakfast food items are free with coupons…so if you are couponing regularly you most likely are not paying for those. Finally, I do not account for lunch simply because lunches can also be couponed for Free or very close to it, as well as you can always eat left overs from the night before 🙂

Monday: Angel’s Primavera Pasta Salad
Ingredients:
1 Chicken Breast
Sweet Colored Peppers
Red Onion or Sweet Walla Walla Onion
Olives
Roma Tomatoes
Fresh Sweet Basil
Lemon
Italian Salad Dressing
Parmesan Cheese
Noodle of choice (I recommend bow tie, spiral or mini penne)
Directions:
- Bring a large pot of water to a boil. Cook your pasta until soft.
- Split chicken breast in half and season with salt and pepper (and/or poultry seasoning) and rub with 1/4 cup Lemon juice. Saute or grill for approximately 5 min or until cooked throughout.
- Cut colored peppers and tomatoes in 1/4 inch pieces. Dice onions finely. Now roughly chop basil and add to boil with veggies.
- Zest one Lemon and the squeeze approximately 2 tbsp of juice from that lemon. Mix all of the veggies, lemon, lemon zest and olives together in a boil. Add cooked noodles to all of the veggies.
- Shred cooked chicken with two forks. Add to bowl with veggies and pasta.
- Add 1 cup of your favorite Italian Salad dressing and stir well.
- Top with Parmesan Cheese.
- Place in the refrigerator and serve chilled.

1 Orange Pepper (Safeway, $1.00 each)
2 Roma Tomatoes (QFC, $1.00/lb)
1 Can Olives
1 Bottle Italian Dressing (Staple Item, should be in your Stockpile! If not buy it at Fred Meyer, Kraft Salad Dressing $1.17 w/coupon…not a great price)
1 Bunch Basil
1 Lemon
Parmesan Cheese
1 Box Noodles of Choice (Albertsons, Ronzoni Free w/Twice the Value Coupons)
1 Chicken Breast (I recommend buying 1 Whole Fryer Foster Farms Chicken and either roasting it whole and cutting off portions as you need, Albertsons $0.99/lb…approx. $3.00 for enough chicken to last at least 2 full meals!!! Or QFC Free Range Whole Chicken for $1.69 each!!!)
Approximate cost for meal: $4.00 (depending on what is in your current stockpile and your current catalinas/coupons you have to use!)
Tuesday: Ground Turkey Meatballs with Feta and Italian Tomatoe Sauce
Ingredients:
1 lb Jennie-O Ground Turkey
1 cup Feta Cheese
1/2 cup chopped Cilantro
3/4 cup finely chopped Onion
1 Can Italian Tomatoes (optional)
1 Bay Leaf (optional)
1/2 cup diced colored Sweet Peppers
1/4 cup Balsamic Vinegar
2 tbsp Brown Sugar
Directions:
- Pre-Heat oven to 350 Degrees F.
- Prepare sauce first. Drizzle 1 tbsp olive oil in a saute pan. Saute 1/4 cup finely chopped onion and diced Sweet Peppers.
- Once onions are transparent add 1 can of Italian Tomatoes (or can Diced tomatoes and 1 Bay Leaf), Balsamic Vinegar and Brown Sugar. Let simmer for approximately 10 minutes.
- Meanwhile combine Ground Turkey, remaining onions and chopped cilantro together. Season with salt and pepper. Roll Ground Turkey mixture into 2 inch balls and place on a baking sheet.
- Using a spoon press a small indication into the meatballs. Fill the “hole” with Feta cheese. Repeat for all meatballs.
- Place in the oven and cook for approximately 25 minutes or until golden brown.
- Serve with Sauce. Enjoy! 🙂

1 Bunch Cilantro (should be around $0.69/bunch…cheapest in bulk at the business center Costco!)
Feta Cheese (I don’t see a great deal anywhere…but I recommend buying the bulk block from Costco…that is the cheapest by far!)
1 Can Italian Tomatoes (Hopefully you have these in your stockpile…if not try using overage or catalinas to pick them up)
Bay Leaf (optional)
1 can Diced Tomatoes (optional)
Approximate Cost of Meal: $6.00 or less (depending on what is in your current stockpile and which coupons/catalinas you currently have to use)
Wednesday: Cabbage and Kielbasa Soup
Ingredients:
- 1 1/2 cup diced Kielbasa
- 1 head of cabbage chopped
- 2 cans of Chicken broth (or 2 cubes chicken bouillon)
- 2 cups of water
- 2-3 tbsp Butter
- Salt and Pepper
- 1 finely chopped onion
- 1 clove diced garlic
- Drizzle 2 tbsp Olive Oil in a Dutch Oven. Saute chopped Kielbasa until browned. Saute Finely chop 1 onion and garlic until almost translucent. Add chopped cabbage and saute until soft.
- Add Chicken broth and water to mixture. Bring to a boil. Let simmer for approximately 10 minutes.

1 head Cabbage (Albertsons, $0.69/lb)

2 cans of chicken broth (should have some in your stock pile if not…buy some with overage or catalinas…or buy chicken bouillon at Costco)

Thursday: Country Style Pork Ribs with Salad and Rice
Ingredients:
3-5 lbs Country Style Pork (bone in preferably)
Garlic
1 bottle of your favorite BBQ sauce
2 tbsp brown sugar
1 tbsp vinegar
Rice
Salad makings
Directions:
In a LARGE pot put 2-3 cloves of garlic and pork ribs. Bring to a boil. Let boil for approximately 45 minutes.
In a mixing bowl combine BBQ sauce, brown sugar and vinegar. Add a dash of salt and pepper. Mix well.
Pre-Heat oven to 350 degrees F.
Strain water from pork and place pork in a roasting dish. Slather with BBQ sauce mixture. Bake at 350 degrees F for 30 minutes.
Make Rice and Salad. Serve with pork and enjoy 🙂

Friday Two Choices: Free for all or Veggie Pizza
(Free for all…eat left overs, visit a friend for a dinner date or make something simple from your pantry)
Ingredients for Pizza Dough:
1 (.25 ounce) package active dry yeast
1 cup warm water
2 cups bread flour
2 tbsp olive oil
1 tsp salt
2 tsp white sugar
Directions:
- In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
- In a large bowl, combine 2 cups bread flour, olive oil, salt, white sugar and the yeast mixture; stir well to combine. Beat until a stiff dough has formed. Cover and rise until doubled in volume, about 30 minutes. Meanwhile, preheat oven to 350 degrees F.
- Turn dough out onto a well floured surface. Form dough into a round and roll out into a pizza crust shape.
Ingredients:
1 cup Pasta Sauce
2 cups Mozzarella Cheese
1 cup Sweet Colored Peppers (yellow, red, orange and/or green)
1/2 cup Onion
1/2 cup Roma Tomatoes
1/4 cup sliced olives
Directions:
- Spread pasta sauce over raw dough. Cover with mozzarella cheese and vegetables.
- Bake for 25 minutes or until golden brown.
- Serve and enjoy 🙂
