Roasted Chicken with Potatoes and Carrots

Ingredients

  • 1 Whole Chicken
  • 3-5 Cloves of Garlic
  • 1 Onion
  • Salt, Pepper and Garlic Powder
  • 3 Sprigs of Thyme (optional)
Directions:
  1.  Rub Chicken with 2 tbsp Olive Oil (and or butter) and season raw Chicken with salt, pepper and garlic powder (my favorite Chicken Seasoning is Johnny’s!)
  2. Place Chicken in a roasting pan or dutch oven with 1 sliced onion, 4-5 cloves of garlic and 4-5 sprigs of Thyme (optional). Do NOT add any water to the bottom of the pan!
  3. Bake at 350 degrees for approximately 3.5 hours, add carrots and potatoes and continue cooking for another 45 minutes.
Prep Time: 5 minutes                       Cook Time: 4 hours                            Difficulty: Easy

  • Whole Fryer Chicken (QFC, $0.88/lb!!! Stock up price…buy a few and freeze the others!)
  • 1 lb of baby carrots (Top Foods, 2 lb bag $1.49)
  • Potatoes (Fred Meyer, 3 lb bag $2.50 each)

Easy French Onion Soup

Ingredients:

  • 1/4 cup butter
  • 1-2 tbsp olive oil
  • 3 onions (2 red onions and 1 sweet white onion), thinly sliced
  • 2 tbsp white sugar
  • 1 cup red wine
  • 2 cans condensed beef broth
  • 1 French baguette
  • Sliced Swiss cheese

Directions:

  1. Pour 2 tbsp of olive oil in a saucepan. Saute onions until slightly soft and add sugar. Cook onions over medium heat for 5 minutes, or until golden brown.  Add butter and melt.
  2. Add water, wine, and beef broth; heat to boiling. Reduce heat to low. Cover soup, and simmer for 10 minutes.
  3. Cut 1 inch thick slices of bread from the loaf. Toast the bread slices at 325 degrees F or until browned, about 10 minutes. Reserve the remaining bread to serve with the soup.
  4. Ladle soup into, oven-safe bowls. Place 1 slice toasted bread on top of the soup in each bowl. Fold Swiss cheese slices, and fit onto toasted bread slices. Place soup bowls on a cookie sheet for easier handling.
  5. Bake at 425 degrees F for 10 minutes, or just until cheese is melted

  • Red Wine (Something cheap or already in your kitchen for cooking)
  • Swiss Cheese (Fred Meyer, Tillamook $2.50)
  • French Bread (Fred Meyer, French Loaf $1.50)

Savory Pot Roast and Cheddar Mash Potatoes

Ingredients:

  • Pot Roast (Safeway, $2.49/lb) 
  • 1/2 cup onion
  • 3 cloves garlic, whole
  • 1/2 cup flour
  • 2 tbsp Worcestershire 
  • Salt and pepper
  • 3 cups Potatoes, chopped (Fred Meyer, $2.50 for a 3 lb bag)
  • 1 cup Cheddar Cheese
  • 1/2 cup milk
  • 3 tbsp butter

Directions:

  1.  Pat pot roast dry and rub down with flour, salt and pepper. Drizzle olive oil in a saute pan and bring to temperature. Once olive oil is hot add pot roast. Brown on all sides for about 2 minutes on each side.
  2. Place pot roast in a crock pot (or roasting pan for the oven, 350 degrees) and turn on to high heat, with onions, garlic and Worcestershire.
  3. Cook for approximately 2 hours and turn Pot Roast over, salt and pepper to taste and cook for another 2 hours.
  4. To make your Cheddar Mash Potatoes.  Cut potatoes into quarters and place in a pot with boiling water. Let boil until a tender with a fork.
  5. Strain water and put potatoes back into the pot. Add butter, milk, salt, pepper, minced garlic (optional), and mash potatoes until they are at your desired consistency. Lastly, add cheddar cheese and mix well. Taste and add more salt and pepper if needed.

  • Onion (Albertsons, $1.49/lb)
  • Tillamook Cheddar Cheese (Fred Meyer, $2.50)
Approximate cost of meal: $8.00 (depending on what is in your current stockpile and which coupons/catalinas you currently have to use)  

Italian Tomato Soup (with lentils optional)

Ingredients:

  • 2 cans Italian Tomatoes
  • 2 cans Chicken Broth
  • 3 stalks of celery, chopped
  • 2 cloves garlic, minced
  • 1 cup onion, chopped
  • 1 cup carrots, chopped
  • 1 cup green zucchini
  • 1/2 cup lentil (optional)

Directions:

  1. Chop all vegetables into like size pieces. Saute in a pan with olive oil, salt, pepper, and garlic. 
  2. Once vegetables are about halfway cooked place them in a large pot with Italian Stewed tomatoes, and Chicken broth. 
  3. Let simmer for 20 minutes and serve.

Taco Salad

Ingredients

  • 2 ripe tomatoes, diced
  • 1 cup Cheddar, shredded
  • 1 large onion, diced
  • 1 bag of Fresh Express Salad Blend
  • 1 lb lean ground turkey, browned, crumbled and drained
  • 1 cup salad dressing
  • 1 cup salsa
  • Tortilla chips, to serve

Directions:

Combine the tomatoes, cheese, onion, lettuce, and ground beef in a large bowl. Add the salad dressing and mix well. Just before serving, add the taco chips, tossing to combine with other ingredients. Top each serving with salsa. Serve with tortilla chips.
