Weekly Meal Plan October 3-7th: Delicious Meals, Recipes and a Shopping List!!! Eating Healthy on a Budget!
Monday, October 3rd: Baked Crispy Cornflake Chicken, Rice and Steamed Broccoli
Ingredients:
- 4 lbs Chicken (I prefer drumsticks or a whole cut chicken)
- 1 cup flour
- 1 egg
- 1 cup milk
- 2 cups crushed Cornflakes, approx. 2/3 of a box (I prefer frosted flakes 🙂 )
- 1 cup all purpose flour
- Salt and pepper (and/or your favorite poultry seasoning…mine is Johnny’s seasoning)
- 1 cup whole milk (or 2% milk will work)
- 4 tbsp Butter, melted
- Rice
- 3 cups Broccoli
Directions:
- Pre-Heat oven to 350 degrees.
- Finely crush Cornflakes in a mixing bowl and set aside. In a separate mixing beat egg and milk. In a third bowl add flour, salt (or Johnny’s) and pepper.
- Now take a piece of chicken and dip it first in the milk/egg bath, then flour mixture, back to milk/egg mix and finally press firmly in the cornflakes (evenly on all sides).
- Place in single layer, in shallow baking pan and drizzle melted butter over atop the chicken.
- Bake for about 1 hour or until chicken is tender, no longer pink and juices run clear (internal temperature of at least 165ºF)

Tuesday, October 4th: Ground Turkey Tacos
Ingredients:
- 1 package Ground Turkey
- Corn or flour Tortillas
- 1 cup chopped Onion
- 3 cloves Garlic, minced
- 1 tsp Cumin
- 1/2 tsp Chili Powder
- 1/4 cup Cilantro
- 2 tbsp Lime juice
- Romaine lettuce (optional)
- Sour Cream (optional)
- Cheese (optional)
- Avocado (optional)
- Salsa (optional)
Directions:
- Drizzle olive oil in the bottom of the pan. Once the oil is hot, add the onion and garlic, saute until translucent, about 5 minutes.
- Add the ground turkey and season with cumin, chili powder, lime juice, cilantro, salt, and pepper. Cook until the turkey browns and is cooked through.
- Remove turkey mixture from heat. Start building your personalized and delicious taco!

Wednesday, October 5th: Homemade Chicken Pot Pie
Ingredients:
- 1-2 lb Chicken, cut into bite size pieces
- 2 cloves Garlic, minced
- Salt and Pepper
- 2 cups Frozen Veggies (or fresh steamed veggies will work too)
- 1 can Cream of Chicken Soup
- 1 cup Bisquick Mix
- 1/2 cup nonfat milk
- 1 egg
Directions:
- Cut chicken into bite size pieces and saute with olive oil, garlic, salt and pepper, until fully cooked.
- Pre-Heat oven to 400 degrees.
- Mix vegetables, chicken and soup in ungreased glass pie plate, 9×1 1/4 inches.
- Make bisquick breading topping. Pour over top of vegetable and chicken mixture in pie plate.
- Bake for 30 minute or until golden brown.

- 1-2 lbs Chicken (Albertsons, $1.99/lb…not a good price…hopefully you have some in your freezer stockpile)
- 1 can Cream of Chicken soup (Stockpile item or use $0.40/3 Campbell’s Cooking soups)
- 1 Bag Frozen Veggies (Stockpile item, or Fred Meyer frozen veggies, $1.00)
- Bisquick or Pillsbury biscuit or pie crust (Use $0.50/2 Pillsbury Pie Crust)

Thursday, October 6th: Homemade Mac & Cheese
Ingredients:
- 1 box elbow noodles
- 4 tablespoons butter
- 4 tablespoons flour
- 1/4 teaspoon dry mustard
- Salt and pepper
- 1 1/2 cup milk
- 2 cups shredded sharp Cheddar cheese
- 3/4 cup breadcrumbs tossed with 2 tablespoons melted butter
Directions:
- Cook macaroni following package directions. Drain in a colander and rinse with hot water; set aside.
- Pre-heat oven to 350 degrees.
- In a saucepan, melt 4 tablespoons of butter over medium-low heat. Stir flour into the butter until smooth and bubbly. Stir in the dry mustard, salt, and pepper. Gradually add milk and cream, stirring constantly. continue to cook, stirring constantly, until thickened. Add cheese and continue to cook and stir until melted.
- Combine the macaroni and sauce and pour into the prepared baking dish. Sprinkle with the buttered bread crumbs and bake for about 25 minutes, or until hot and bubbly and topping is lightly browned.

Friday, October 7th: Brown Sugar and Apple Roasted Pork Loin (slow cooker) and Carrots
Ingredients:
- 1 boneless pork loin roast, 2-3 pounds
- 2 clove garlic, halved
- salt and pepper
- garlic powder
- 1 1/3 cups brown sugar, divided
- 1 tablespoon Dijon mustard
- 1 tablespoon balsamic vinegar
- 1/2 apple, sliced
- 2 cups carrots
Directions:
- Sprinkle with garlic powder, salt and pepper, then prick the roast all over with a fork or skewer.
- In a cup or bowl, combine 1 cup of the brown sugar, the mustard, and vinegar. Rub all over the roast.
- Place roast in the slow cooker on top of a bed of carrots and garlic cloves, cover and cook on LOW for 5 hours.
- Take the remaining 1/3 cup brown sugar; Spread over the top of the roast. Place finely diced apple over atop the roast. Cover and continue cooking on LOW for 1 hour longer.
