Chocolate Banana Cupcakes (Muffins)

Easter Cupcakes
This recipe for Chocolate Banana Cupcakes (Muffins) is amazingly delicious. Perfect as an Easter treat or for your morning breakfast these cupcake/muffins are not as sweet as your standard cupcakes. If you make them without the frosting you can simply call them “muffins”. 😉 They pair perfectly with a cup of coffee and good book or add the frosting and call them cupcakes for a special event.  
 
Ingredients:
  • 1 egg
  • 1/3 cup of applesauce
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla
  • 1 cup mashed bananas (about 2 large bananas)
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup cocoa powder 
  • A hand full of Chocolate chips (optional)

Directions:
  1. Making these tasty little muffins is super easy! Start out with preheating the oven to 350ºF.
  2. Grease your muffin tin or line them with cupcake liners.
  3. Whisk together the egg, sugar, applesauce, vanilla, and bananas. Mix the dry ingredients and add to the wet. Mix just until combined (don’t over mix!). Add some chocolate chips if you want.
  4. Bake for about 20-25 minutes for regular cupcakes/muffins.
  5. Let muffins cool for about 20 minutes before adding frosting. This recipe makes about 10-12 total.

  • ½ teaspoon salt
  • ¼ cup cocoa powder

Instructions
  1. Preheat oven to 350ºF. Grease muffin tin or line them with cupcake liners. Whisk together the egg, sugar, applesauce, vanilla, and bananas. Mix the dry ingredients and add to the wet.
