Recipe type: Soup
Serves: 4 servings
Ingredients
  • 4 cups Beef Broth
  • 1 Red Onion, thinly sliced into thin rings
  • 3 Sweet White Onion, thinly sliced in rings
  • Stale or Toasted French Bread, cut into large 2×2 croutons
  • Provolone Cheese, sliced
  • 1½ cup Red Wine (any cheap wine will work)
  • 3-4 Tbsp Butter
  • 1-2 Tbsp white sugar
  • Salt and Pepper
  • Olive Oil
Instructions
  1. Preheat oven to broil.
  2. In a Dutch oven or large pot, saute onions in olive oil with salt, pepper and white sugar. Cook until onions are half way cooked.
  3. Add butter to sauteed onions and finish cooking until translucent.
  4. Add beef broth, and wine to onion mixture. Let simmer for about 30 minutes. This will allow all of the alcohol to cook out of the soup.
  5. Transfer soup into oven safe bowls, add a few crouton/bread pieces on top and cover with 1-2 slices of provolone cheese.
  6. Broil in the oven for 3-4 minutes or until cheese if fully melted and golden brown.
  7. Carefully remove from oven let sit for just a minute and serve hot. Bon Appetite!
