Skillet Sausage Primavera Pasta

It is truly heart breaking how many of us know someone personally or even intimately who has struggled with breast cancer. In fact, it has effected so many that October is now known as Breast Cancer Awareness Month.

The Ellie Fund, is an organization that provides essential support services for breast cancer patients and their families like free meals and grocery store gift certificates. Also for the month of October, al fresco will also be selling their product in pink packaging and donating $1.00 from each pink package purchased to the American Cancer Society for up to $25,000.

Pasta Primavera with Sausage
Ingredients:
2 (14.5 oz) cans Italian Tomatoes
1 onion, diced
5 cloves garlic, minced
1/2 cup yellow and/or orange pepper
3/4 cup zucchini, chopped
3/4 cup asparagus, chopped
3/4 cup carrot, grated
linguine noodles
2-3 Tbsp. fresh sweet basil, chopped
grated Parmesan cheese
2 Tbsp. brown sugar
2 Tbsp. balsamic vinegar
salt and pepper, to taste
Directions
In a large pot bring water to a boil. Once boiling add Linguine noodles to the water and add a pinch of salt. Boil until noodles are tender. Add olive oil to a large sautè pan or Dutch oven and heat. Place Sausage in the pan and brown. Remove Sausage from pan and add a dab more olive oil to the drippings in the pan. Add onion, garlic, and sweet peppers, zucchini, and asparagus. Season with salt, pepper, and sweet basil; saute until tender.
Add sausage into the vegetable mixture. Add tomatoes, brown sugar and balsamic vinegar and simmer for approximately 15 minutes. Serve over the top linguine noodles and top with fresh grated Parmesan cheese.
