Sweet Potato Skillet Hash Gluten Free Recipe

Breakfast foods are my favorite! I love to make breakfast for my family, both in the mornings and even for dinner! Sweet Potato Skillet Hash is one my families absolute favorites! It is seriously flavorful and delicious. Even better it is gluten free and even paleo friendly! There are several different variations of this recipes, as you can use breakfast sausage, ground turkey, or sweet Italian sausage. With changing up the different meats when making this recipe you can create a new and different dimension to the recipe.

Ingredients

3 Sweet Potatoes, diced into small bite size pieces
1 TBSP Extra Virgin Olive Oil
1 lb Breakfast Sausage
1 Onion, diced
1 tsp Paprika
1 tsp Italian Seasoning
1/2 tsp garlic powder
2 cups Spinach

Directions

  1. Pre-heat the oven to 400 degrees Fahrenheit.
  2. Cut sweet potatoes into small 1/4″ bite sized pieces. Place them on a large baking sheet, drizzle with olive oil and and bake for 8 minutes.
  3. While sweet potatoes are baking, cook Italian sausage and onions together in a large skillet.
  4. Add sweet potatoes to the sausage mixture. Add Paprika, Italian seasoning, and garlic powder. Cook for 5 minutes.
  5. Remove from heat and add spinach.
  6. Top each individual serving with a fried egg and ENJOY!
