    Weekly Meal Plan…Tuesday: Ground Turkey Tacos…YUM YUM

    Tuesday, October 4th: Ground Turkey Tacos Ingredients: 1 package Ground Turkey Corn or flour Tortillas 1 cup chopped Onion 3 cloves Garlic, minced 1 tsp Cumin 1/2 tsp Chili Powder 1/4 cup Cilantro 2 tbsp Lime juice Romaine lettuce (optional) Sour Cream (optional) Cheese (optional) Avocado (optional) Salsa (optional) Directions: Drizzle olive oil in the bottom of the pan. Once the oil is hot, add the onion and garlic, saute until translucent, about 5 minutes. Add the ground turkey and season with cumin, chili powder, lime juice, cilantro, salt, and pepper. Cook until the turkey browns and is cooked through. Remove turkey mixture from heat.     Monday, October 3rd: Baked Crispy Cornflake Chicken, Rice and Steamed Broccoli  Ingredients: 4 lbs Chicken (I prefer drumsticks or a whole cut chicken) 1 cup flour 1 egg 1 cup milk 2 cups crushed Cornflakes, approx. 2/3 of a box (I prefer frosted flakes  ) 1 cup all purpose flour Salt and pepper (and/or your favorite poultry seasoning…mine is Johnny’s seasoning) 1 cup whole milk (or 2% milk will work) 4 tbsp Butter, melted Rice 3 cups Broccoli Directions: Pre-Heat oven to 350 degrees.     I think its about time I talk a little about having a Freezer stockpile…When the price of meat goes down to a rock bottom price or whenever you see a great deal on discount (manager special) meats…buy them and put them in the freezer for when there’s a “bad” week.     Monday: Angel’s Primavera Pasta Salad Ingredients: 1 Chicken Breast Sweet Colored Peppers Red Onion or Sweet Walla Walla Onion Olives Roma Tomatoes Fresh Sweet Basil Lemon Italian Salad Dressing Parmesan Cheese Noodle of choice (I recommend bow tie, spiral or mini penne) Directions: Bring a large pot of water to a boil. Cook your pasta until soft. Split chicken breast in half and season with salt and pepper (and/or poultry seasoning) and rub with 1/4 cup Lemon juice. Saute or grill for approximately 5 min or until cooked throughout. Cut colored peppers and tomatoes in 1/4 inch pieces. Dice onions finely. Now roughly chop basil and add to boil with veggies.…
