Weekly Meal Plan for Friday October 7th! Brown Sugar and Apple Pork Loin!!! YUMMY…I made ours last night and I had to force my kids to stop eating!!!

Friday, October 7th:  Brown Sugar and Apple Roasted Pork Loin (slow cooker) and Carrots

Ingredients:

    • 1 boneless pork loin roast, 2-3 pounds
    • 2 clove garlic, halved
    • salt and pepper
    • garlic powder
    • 1 1/3 cups brown sugar, divided
    • 1 tablespoon Dijon mustard
    • 1 tablespoon balsamic vinegar
    • 1/2 apple, sliced
    • 2 cups carrots

Directions:

  1. Sprinkle with garlic powder, salt and pepper, then prick the roast all over with a fork or skewer.
  2. In a cup or bowl, combine 1 cup of the brown sugar, the mustard, and vinegar. Rub all over the roast.
  3. Place roast in the slow cooker on top of a bed of carrots and garlic cloves, cover and cook on LOW for 5 hours.
  4. Take the remaining 1/3 cup brown sugar; Spread over the top of the roast. Place finely diced apple over atop the roast. Cover and continue cooking on LOW for 1 hour longer.

Prep Time:  5 min       Cook Time:   5 hours       Difficulty:   Easy

Shopping List:

  • 2-3 lb Pork loin or Roast (Safeway, $2.29/lb)
  • Carrots (Cheapest at Costco)
  • 1 apple (QFC or Albertsons, $1.49/lb)
  • Dijon Mustard (???)

Approximate total cost of meal: $5.50 (depending on what is in your current stockpile and your current catalinas/coupons you have to use!)

    You are very welcome! I truly appreciate your comments! The meal plan and shopping list match ups…take me 5-6 hours to do for the week…and I LOVE doing them for my readers…but it is much more motivating when I hear comments like yours 🙂
