Weekly Meal Plan Oct 11-14th: Healthy and delicious meals for you and your family! Recipes and Shopping list included!

This weeks meals should not cost you more than $30!!! I do take into account items you should have in your current stockpile or pantry (I call those staples). I also factor in that most breakfast food items are free with coupons…so if you are couponing regularly you most likely are not paying for those. Finally, I do not account for lunch simply because lunches can also be couponed for Free or very close to it, as well as you can always eat left overs from the night before :)

Monday, October 10th: Ground Turkey Burgers with Cilantro and Feta Cheese

Ingredients:

  • Ground Turkey
  • Feta Cheese
  • 1 bunch of Cilantro 
  • 1/2 cup finely diced Onion (preferably a sweet onion) 

Directions: 

  1. Dice 1/2 cup onions. 1 cup Cilantro and 2 cloves garlic.
  2. Mix the above mixture and 1 cups Feta cheese into the ground turkey. Make sure to really mix it well!
  3. Season with salt and pepper.
  4. BBQ until fully cooked.
  5. Serve over a  bed of lettuce/spring mix or on a bun!

Prep Time: 5 min       Cook Time: 10 min      Difficulty: Easy

Shopping List:

    •  (Fred Meyer, Foster Farms  $3.99 and use $1/1 Foster Farms Ground Turkey SS 10/2 or $2/1 from inside the package, as low as $1.99)
    • Cilantro (Safeway, $0.50/bunch)
    • Feta Cheese (I find it is cheapest at Costco and lasts us about 1 month)
      Athenos Feta Cheese:
      Buy (2) and Use  B1G1 Athenos Feta Cheese printable and $1/1 Athenos Feta Cheese printable
    • 1 small Onion (hopefully you have some in your refrigerator, if not I am looking for a price!)
    • Spring Mix or Hamburger Bun
Approximate total cost of meal: $3.50 (depending on what is in your current stockpile and your current catalinas/coupons you have to use!)

Tuesday, October 11th:  Homemade Speghetti with Ground Beef

Ingredients:

  • 1 lb Ground Beef
  • 1 lb spaghetti noodles
  • 1/2 cup finely diced onion
  • 4 cloves finely diced garlic
  • 1/2 cup finely diced sweet colored peppers (optional)
  • 1/4 cup finely chopped fresh Sweet Basil
  • 1/4 cup finely chopped fresh Cilantro
  • 2 cans Italian Tomatoes or 1 jar of pasta sauce (your choice)
  • 2 tbsp Brown Sugar
  • 1 tbsp Balsamic Vinegar
  • Salt and pepper
  • Garlic powder

Directions:

  1. In an extra large pot bring water to a boil. Once boiling add spaghetti noodles to the water and add a pinch of salt. Boil until noodles are tender.
  2. Add olive oil to a large saute pan or Dutch oven and heat. Place Ground Beef in pan and cook until evening browned.
  3. Remove Sausage from pan and add a dab more olive oil to the drippings in the pan. Add onion, garlic, and sweet peppers, season with salt, pepper, garlic powder, cilantro and sweet basil; saute until tender.
  4. Add Italian tomatoes or jar of pasta sauce, brown sugar and balsamic vinegar and simmer for approximately 15 minutes.
  5. Serve with fresh grated parmigiana cheese :)

Wednesday October 12th: Wednesday: Fresh Dungeness Sweet Buttered Dungeness Crab with Pasta
*(my Birthday Present to myself!)

Ingredients:

  • 1 Whole Dungeness Crab
  • 1/2 cup Butter
  • 1/4 cup white sugar
  • 1 lb Sugar Snap Peas
  • 2 cloves garlic, minced
  • Pepper
  • 1 cup White Wine
Directions:
  1. Clean and Shell crab.
  2. In an extra large pot bring water to a boil. Once boiling add spaghetti noodles to the water and add a pinch of salt. Boil until noodles are tender.
  3. Cut the ends off snap peas and cut in half.
  4. Place butter in a saute pan with snow peas. Saute for 3 minutes. Add crab, white wine, sugar and pepper (salt if needed), continue to saute for another 5 minutes or until snow peas are tender.
  5. Place desired about of noodles in a bowl and pour crab and sauce over the top.
Prep Time: 30 min                  Cook Time: 15 min                     Difficulty: easy

  • 1 whole Dungeness crab (QFC, $3.99/lb, great price!)
  • 1 lb sugar snap peas (not sure about the best price my guess is Fred Meyers)
  • Butter
  • Garlic
  • Pasta of choice (I prefer thin spaghetti or linguine) (Stockpile item or Safeway: Barilla pasta $0.89 each and use $0.55/1 Barilla Whole Grain Pasta, exp. 11/13/11 (SS 09/18/11)…Final Cost: $0.34 each)
Approximate cost for meal: $11.00 or less (depending on what is in your current stockpile and your current catalinas/coupons you have to use!)  
 

Thursday, October 13th: Cabbage and Kielbasa Soup

Ingredients:

    • 1 1/2 cup diced Kielbasa
    • 1 head of cabbage chopped
    • 2 cans of Chicken broth (or 2 cubes chicken bouillon)
    • 2 cups of water
    • 2-3 tbsp Butter
    • Salt and Pepper
    • 1 finely chopped onion
    • 1 clove diced garlic
Directions:
  1. Drizzle 2 tbsp Olive Oil in a Dutch Oven. Saute chopped Kielbasa until browned. Saute Finely chop 1 onion and garlic until almost translucent. Add chopped cabbage and saute until soft.
  2. Add Chicken broth and water to mixture. Bring to a boil. Let simmer for approximately 10 minutes.
Prep Time: 10 min                      Cook Time: 20 min                         Difficulty: easy

Kielbasa (Top Foods, Johnsonville Kielbasa $3.50, use $0.75/1 Johnsville Smoked Chicken Sausage, exp. 1/31/12 (RP 09/11/11)…Final Cost: $2.75)
1 Onion
1 head of Cabbage (Fred Meyer, $0.25/lb, Stock up price for meals!)
2 cans of chicken broth (Stockpile item, or Albertsons Swansons (32 oz) $2.29 and use $1/3 Swanson Broth or Stock Carton, exp. 11/5/11 (SS 10/02/11 R)…Final Cost: $1.29)
Garlic

Approximate cost of meal: $4.50 (depending on what is in your current stockpile and which coupons/catalinas you currently have to use) 

Friday, October 14th: Twice Baked Potatoe

Ingredients:

  • 4-6 large baking potatoes
  • 8 slices bacon
  • 1 cup sour cream
  • 1/2 cup milk
  • 4 tablespoons butter
  • Salt and pepper
  • 1 cup shredded Cheddar cheese, divided
  • 8 green onions, sliced, divided (optional)

Directions:

  1. Preheat oven to 350 degrees F.
  2. Bake potatoes in preheated oven for 1 hour. Meanwhile, place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  3. When potatoes are done allow them to cool for 10 minutes. Slice potatoes in half lengthwise and scoop the insides into a large bowl; save skins. To the potato insides add sour cream, milk, butter, salt, pepper, 1/2 cup cheese and 1/2 the green onions. Mix with a hand mixer until well blended and creamy. Spoon the mixture into the potato skins. Top each with remaining cheese, green onions and bacon.
  4. Bake for another 15 minutes.
Prep Time: 10 min                      Cook Time: 25 min                         Difficulty: easy

  • 4-6 Russet Potatoes (Top Foods, 10 lb bag $1.37!!!!)
  • Sour Cream (QFC, Kroger Brand $1.25 each)
  • Bacon (Albertsons brand $4.99 or Top Food, Bar S, $2.99…however it is probably cheaper per meal to buy it from the butchers block)
  • Shredded Cheese (Stockpile item, it was free last week or Top Foods, Hagen Cheese $2.50)
  • Green Onions (Fred Meyer, $0.69 each)
Approximate cost of meal: $4.50 (depending on what is in your current stockpile and which coupons/catalinas you currently have to use)
