Chicken Cordon Bleu and Italian Hash Ingredients: 4-5 halved chicken breasts, pounded as thin as possible 3 cups bread crumbs 8 sprigs fresh thyme 3 cloves garlic, minced 2 tbsp butter 5 slices Prochutta Ham, or ham of choice 1-2 cups grated Gruyere Cheese 2 eggs 1/4 cup milk 2 cups flour Olive Oil Kosher Salt and Pepper Directions: Take a sheet of plastic wrap and loosely wrap chicken breast. Friday, October 7th: Brown Sugar and Apple Roasted Pork Loin (slow cooker) and Carrots Ingredients: 1 boneless pork loin roast, 2-3 pounds 2 clove garlic, halved salt and pepper garlic powder 1 1/3 cups brown sugar, divided 1 tablespoon Dijon mustard 1 tablespoon balsamic vinegar 1/2 apple, sliced 2 cups carrots Directions: Sprinkle with garlic powder, salt and pepper, then prick the roast all over with a fork or skewer. In a cup or bowl, combine 1 cup of the brown sugar, the mustard, and vinegar. Rub all over the roast. Place roast in the slow cooker on top of a bed of carrots and garlic cloves, cover and cook…

Beef and Vegetable Stew (crock pot recipe) Ingredients: 1-2 lbs stewing beef, cut into cubes. 5-6 white potatoes (I actually prefer sweet potatoes instead) 2-3 carrots, chopped 1 small onion, chopped 2-3 celery stalks, chopped 1 cup corn (frozen or canned) 2 cans beef broth 1 can Italian tomatoes 1 cup water 2 tbsp soy sauce 1 tsp Tabasco sauce 1 tsp Worcestershire sauce 2 tbsp butter or olive oil 2 cloves garlic, minced Kosher salt and pepper Directions: Cut beef into 1 inch cubes. Thursday, October 20th: Campbell’s Pot Roast with Veggies Ingredients: Pot Roast (Albertsons BIGI sale, usually around $12.00 for 2) 2 cups carrots Organic Carrots, chopped (or whole baby carrots) (QFC, $1 each for 1 lb bag, or cheaper at Costco) 2 cups Potatoes, chopped (Albertsons, $1.99 for a 10 lb bag) 1 cup onion, chopped 3 cloves garlic, whole 1/2 cup flour 1 can Campbells Cream of Mushroom (or Cream of Chicken Soup) Salt and pepper Directions: Pat pot roast dry and rub down with flour, salt and pepper. Delicious Ground Turkey Meatloaf
Tuesday, October 18th: Ground Turkey Meatloaf Ingredients: 2 tbsp butter 1 cup onion, chopped 3 cloves garlic, minced 1 1/4 lbs ground turkey 1/2 cup breadcrumbs 1 egg (or 1/4 cup egg substitute) 3/4 cup Ketchup 2 teaspoons Worcestershire sauce 3/4 teaspoon salt 1/2 teaspoon black pepper Directions: Melt butter in a saute pan. Cook onion and garlic in melted butter for 5 minutes (until onions are transparent), stirring occasionally. Set aside mixture in a separate bowl. Combine turkey, bread crumbs, egg, 1/4 cup of the Ketchup, Worcestershire sauce, salt, and pepper with onion mixture. Press meatloaf into an 8×4-inch loaf pan. Spread remaining Ketchup on top.
