Apple Spiced Cake

I love to cook and bake for my family! With 6 kids it can be hard to find a treat that everyone likes. Many times I find myself making a few different treats throughout the week to meet every ones requests. The one ingredient that my whole family agrees upon are apples! So when I saw this awesome Apple Spiced Cake recipe on the Juicy Juice website I knew I needed to give it a try.

I had fun making this insanely delicious and moist cake with my kids. They all got to pitch in and help mom make this dessert bread. The little boys love helping me mix all of the ingredients together. My older kids enjoyed helping me peel the apples and cook those off. As well as making the glaze to drizzle on top!

We made a few adjustments to the original recipe to meet the wants and needs of my kiddos. The first change we made was using fresh granny smith green apples cooked off into a chunky applesauce, instead of using the dried apples. We loved the fresh fruit in our cake! Plus we ALWAYS have apples in our house so it was convenient as well.

The second big change we made to the original recipe was it the frosting. As a family we are not big fans of frostings, so we decided to make a cinnamon glaze with a cinnamon and sugar sprinkle on top.

Spiced Apple Cake

This Spiced Apple Cake is the most moist and delicious cake I have ever had in my life. It's the perfect combination of fruity, with a settle sweetness and a touch of fall spice, all wrapped up in a cake. Yum yum so good!

Ingredients

  • 1 cup Juicy JuiceĀ® 100% Juice, apple flavor
  • 1 Granny Smith apples cored and coarsely chopped
  • 1 box (18.25 ounces) spice cake mix
  • 1 cup water
  • 3 large eggs
  • 1/3 cup unsweetened applesauce
  • 1/2 teaspoon ground cinnamon
  • Option 1: 1 container (16 ounces) prepared vanilla, white or cream cheese frosting
  • Option 2: Cinnamon Glaze (1 cup powered sugar, 2 TBS milk, 1 tsp vanilla extract, 1 tsp cinnamon (mix all together to create a simple glaze)

Instructions

    1. Combine Juicy Juice 100% juice and apples in small saucepan. Bring to a boil; reduce heat to medium and cook for 15 to 17 minutes or until juice has evaporated. Cool to room temperature.

    2. Preheat oven to 350° F. Grease and lightly flour 13 x 9-inch baking pan.

    3. Mix cake mix, water, eggs and applesauce in large mixer bowl. Fold in cooked apples. Pour into prepared pan.

    4. Bake for 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool completely in pan on wire rack.

    5. Once cake has cooled spread frosting or drizzle glaze over cake.
