Cranberry Marshmallow Fluff

Looking for a fun new way to use cranberries for the holidays? Do you love something a little sweet and sour? This Cranberry Marshmallow Fluff is the perfect mixture of sweet and tart. Mixing the amazing tartness of the cranberries with one of my favorite ingredients ever….whipping cream!

I am not going to lie….I literally make this dessert salad from November thru January multiple times and eat it as a sweet treat on a regular bases! It’s soooooo yummy and insanely easy to make!

Just a for warning this recipe does take a little bit of time to prepare. It is a two part recipe and needs to sit in the refrigerator for at least 8 hours before it can be finished.

This Cranberry Salad is the absolute perfect combination of sweet and tart! Spruce of your holiday spread with this tasty treat.

Ingredients

  • 1 (12 ounce) package of fresh cranberries 
  • 1 cup white sugar
  • 1 (20 ounce) can of crushed pineapple, drained
  • 1 cup heavy whipping cream
  • 1/2 cup sugar
  • 2 cups marshmallows 
  • 1 green apple, peeled and diced
  • 1/2 cup chopped pecans or walnuts (optional) 

Instructions

  1. Chop cranberries in a food processor, put in a large bowl and mix in 1/2 cup sugar. Cover and refrigerate for 8-24 hours (the longer the better).
  2. Pour whipping cream and 1/2 cups sugar into a stand mixer (or use an electric hand mixer) and mix until stiff. Add the pineapple, and diced apples to the cranberry mixture, mix well. Fold whipped cream into the fruit mixture.
  3. Serve topped with chopped pecans or walnuts.
  4. Keep covered and refrigerated. Store for up to 3-4 days.
