Crockpot Corn Beef Brisket and Cabbage
I have always loved Corn Beef. It’s so easy to make, extremely flavorful and can be transformed into several different dishes. While grocery shopping recently I found a 3 lb Corn Beef Brisket on sale for $2.00/lb! Now that’s a smoking HOT price so I just had to pick up some for our dinner this week!
Since I work nights I decided I would try something new and make it in the crockpot (I actually use a Ninja 3-in-1 Cooking System, it works the best). I can’t believe how amazing it turned out, so moist, flavorful and essentially no prep or mess to clean up!
So here’s my recipe – don’t laugh, I know it’s crazy simple!
Crockpot Corn Beef Brisket and Cabbage
Ingredients
- 3-4 lb Corn Beef Brisket (comes with a pickling packet)
- 2 cups baby carrots
- 1 head of cabbage, quartered
- 1 onion, quartered
- 1 stalk of celery, quartered
- 3-4 cups water
- 3 TBSP butter (optional)
- Salt and Pepper (optional)
Directions
- Place corn beef brisket in the crockpot. Sprinkle pickling spices over top. Pour 3-4 cups water until brisket is nearly covered. Turn crockpot to HIGH and cook for 4-5 hours.
- Add carrots, onions and celery. Cook for 1 more hour.
- Add cabbage and cook for 1 last hour or until tender. Remove veggies from crockpot with a slatted spoon. Season with butter, salt and pepper.
- Remove corn beef from water and serve. Yum!!!!
