Garden Vegetable Italian Tomato Soup
For all you gardeners out there, vegetarians, soup lovers or veggie extremists like me here is an amazing soup recipe that will rock your socks off. This Garden Vegetable Italian Tomato Soup is seriously divine. You will only need to make it once to be known for it. The best part is that it is packed with delicious vegetables that can easily be found in even a simple gardeners garden. I actually used fresh from the garden zucchini, peppers and carrots!
Ingredients
- 1 cup onion, diced
- 2 TBSP olive oil
- 4 cups chicken stock (make this vegetarian by using vegetable stock)
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 cup yellow bell pepper
- 1 cup onion bell pepper
- 3 cans Italian Stewed Tomatoes
- 1 cup green zucchini, chopped/cubed
- 1 cup yellow zucchini, chopped/cubed
- 2 tsp Italian Seasoning
- 1 tsp dried basil
- Salt and Pepper
Directions
- Saute onions until soft. Add chicken stock and bring to a gentle boil.
- Add Italian stewed tomatoes, carrots, celery, yellow and orange peppers. Bring mixture to a boil and let simmer for 10-15 minutes or until vegetables are tender.
- Add Italian seasoning, basil, green and yellow zucchini’s. (Do not add these ingredients until the first batch of veggies are tender, otherwise your zucchini will get mushy and the seasonings will be too strong).
- Let simmer for 5-10 more minutes. Season to taste and enjoy! 🙂
