LEGO Jell-O Protein Snack

Boy do I love my kids, but when Back to School time rolls around I am READY for a regular schedule! One of my kids favorite things to do as we prepare for school to start up is to head to the store and pick out some healthy snacks for after school. With 5 kids ranging is ages from 2-15 years old those after school snack needs can vary greatly, however there seems to be one snack that they all really LOVE…JELL-O!

Juicy Juice + Protein Rocks!

I don’t buy Jell-O often for the kids as I am not a huge fan of it’s sugary content and zero nutritional value. However, I think I have discovered a new way to make Jell-O a little healthier for my kids! Plus it makes me feel a little better giving it to them as a after school snack, knowing there is protein! We added Juicy Juice + Protein to our Jell-O and it turned out AMAZING! I thing the Juicy Juice + Protein juices may me my new favorite juice boxes. My kids enjoy them as a juice, but I can also turn them into a yummy protein Jell-O treat for after school treats.

Making LEGO Jell-O Snacks is so easy!

Here’s what I did…instead of adding cold water to my Jell-O mix, I substituted 1 full pouch of Juicy Juice + Protein orange juice. Following the directions on the Jell-O package, I mixed it together, poured the mixture into my LEGO molds (this was just to make the Jell-O more fun to eat) and put them in the refrigerator. I did actually freeze some of them as well, because my kids also LOVE Jell-O frozen because it’s more refreshing on a hot day and easier to eat for the little guys.

The strawberry Jell-O mixed with the Juicy Juice + Protein Orange Juice was actually really tasty. The combination of strawberry and orange created a yummy refreshing Jell-O treat my kids couldn’t resist!

Why LEGO’s?

The added fun of making their protein Jell-O treats into LEGO’s just made eating them soooo much more fun! I am definitely adding this recipe to our list of “mom approved” after school snacks!
