Pumpkin Spice Delight Cookies

These Pumpkin Spice with Spiced Cream Cheese Frosting cookies, are simply the most delightful cookies you will EVER eat! So soft, moist and irresistible. These cookies are crafted with a perfect blend of pumpkin and fall spices. The cream cheese frosting is just right the exact amount of sweetness.

I hate to admit this but I have not always been a huge pumpkin spice fan. I like a homemade pumpkin pie once a year, I enjoy a good pumpkin roll, but to be honest I am not a die hard pumpkin fan. But these cookies have changed my view on pumpkin treats for sure. In fact, I am slightly obsessed with this recipe. I make them a couple times a month throughout the Fall season for my family. I also coach gymnastics and my gymnasts literally beg me for these cookies year round! I can get them to try just about any skill, if I offer them just one pumpkin spice cookie. HAHA

The Secret

Now to the recipe. It is really such an easy recipe, but there is one extremely important step that is the secret to making these cookies so soft and amazing. Are you ready? SIFT THE FLOUR! You must, must, must sift the flour.

But wait, I got a little ahead of myself. The first step to making these to die for cookies, is to cream the butter and sugar with a mixer (this just means to mix these ingredients together until they create a nice creamy texture). Then add the remaining wet ingredients (pumpkin and egg) and continue to mix, until you get a nice smooth texture.

Next, place all dry ingredients (flour, pumpkin spice, salt, and baking powder) into a sifter and sift into a bowl. Fold sifted dry ingredients into pumpkin mixture, until well mixed.

Scoop a spoonful of cookie mixture onto a silicone cookie mat about 1.5-2 inches apart from each other (I put 9 cookies per standard cookie sheet) and bake for 15 minutes.

The Frosting!

Now to making the spiced cream cheese frosting. This part is fast and easy as well. Simply put the softened, room temperature cream cheese and butter in a blender, with the vanilla extract and 1 cup of powered sugar. Mix on low until creamy. Add another cup of powered sugar, 1 tsp of pumpkin spice seasoning and 1/2 tsp of cinnamon to the mixture and continue to mix until fully combined.

Once the cookies are completely cooled, generously spread the spiced cream cheese frosting atop the cookies. Finally finish with a dusting of a small amount of cinnamon.

Ingredients

  • 1/2 cup sweet cream salted butter (softened)
  • 1 cup sugar
  • 2 eggs
  • 1 cup canned pumpkin
  • 2 cups flour
  • 4 tsp baking powder
  • 1 tsp salt
  • 2 tsp pumpkin spice seasoning

Instructions

  1. In a mixer cream butter and sugar until fluffy.
  2. Add pumpkin and eggs to mixture and mix on low/medium until fully mixed.
  3. In a separate bowl sift flour, baking powder, salt and pumpkin spice seasoning.
  4. Mix or fold in dry ingredients into the wet ingredient mixture.
  5. Scoop one heaping spoonful of cookie mixture onto a silicone cookie sheet or cookie sheet lined with parchment paper.
  6. Bake at 350 degrees Fahrenheit for 15 minutes.
  7. Place cookies on a rack to cool completely.

Spiced Cream Cheese Frosting

  • 1/2 cup softened butter
  • 8 ounces of softened, room temperature cream cheese
  • 2 cups powered sugar
  • 1 tsp vanilla extract
  • 1 tsp pumpkin spice seasoning
  • 1 tsp cinnamon
  1. Mix all ingredients together until light and fluffy.
  2. Generously spread frosting a top the cooled cookies.
  3. Carefully sprinkle each cookie with a light dusting of cinnamon.
