Weekly Meal Plan 2/6: Crispy Cornflake Chicken, Brown Sugar Roasted Pork, Cream of Mushroom Soup and more!

Ground Turkey Burgers with Cilantro and Feta Cheese

Ingredients:

  • Ground Turkey (Super cheap at Safeway this week! See the deal HERE)
  • Feta Cheese
  • 1 bunch of Cilantro
  • 1/2 cup finely diced Onion (preferably a sweet onion)

Directions: 

  1. Dice 1/2 cup onions. 1 cup Cilantro and 2 cloves garlic.
  2. Mix the above mixture and 1 cups Feta cheese into the ground turkey. Make sure to really mix it well!
  3. Season with salt and pepper.
  4. BBQ until fully cooked.
  5. Serve over a  bed of lettuce/spring mix or on a bun!

Prep Time: 5 min       Cook Time: 10 min      Difficulty: Easy

Baked Crispy Cornflake Chicken, Rice and Steamed Broccoli 

Ingredients:

    • 4 lbs drumsticks Chicken (only $0.99/lb at Safeway!)
    • 1 cup flour
    • 1 egg
    • 1 cup milk
    • 2 cups crushed Cornflakes, approx. 2/3 of a box (I prefer frosted flakes :) )
    • 1 cup all purpose flour
    • Salt and pepper (and/or your favorite poultry seasoning…mine is Johnny’s seasoning)
    • 1 cup milk
    • 4 tbsp Butter, melted

Directions:

  1. Pre-Heat oven to 350 degrees.
  2. Finely crush Cornflakes in a mixing bowl and set aside. In a separate mixing beat egg and milk.  In a third bowl add flour, salt (or Johnny’s) and pepper.
  3. Now take a piece of chicken and dip it first in the milk/egg bath, then flour mixture, back to milk/egg mix and finally press firmly in the cornflakes (evenly on all sides).
  4. Place in single layer, in shallow baking pan and drizzle melted butter over atop the chicken.
  5. Bake for about 1 hour or until chicken is tender, no longer pink and juices run clear (internal temperature of at least 165ºF)

Country Style BBQ Pork

Ingredients:

  • 3-5 pounds Pork Shoulder Country Ribs (Great price at Safeway this week!)
  • 1 bottle of your favorite BBQ sauce
  • 4 cloves garlic, whole
  • Salt and pepper

Directions:

  1. Pre-heat oven to 350 degrees F.
  2. Place pork in a large pot of water with 3 cloves of garlic and boil for approximately 45 minutes.
  3. Drain water and place pork in a baking dish and slather generously with BBQ sauce. Cover with foil and bake for 45 minutes.

Prep. Time: 10 minutes Cook Time: 45 minutes Difficulty: Easy 

Cream of Mushroom Soup

Ingredients

  • 1/2 cup chopped onion
  • 2 tablespoons butter
  • 3 cups sliced fresh mushrooms, portabella tastes best! (great price at Costco or Safeway)
  • 6 tablespoons all-purpose flour
  • 2 (14.5 ounce) cans chicken broth
  • 1 cup half-and-half cream
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

Directions

  1. In a large saucepan, saute onion in butter until tender and transparent.  Add mushrooms and saute until tender. Add flour to create a rue.
  2. Stir broth into the mushroom mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat.
  3. Stir in the cream, salt and pepper. Simmer, uncovered, for 15 minutes, stirring often.

 

 

Brown Sugar and Apple Roasted Pork Loin (slow cooker) and Carrots

Ingredients:

    • 1 boneless pork loin roast (or pork chops will work as well), 2-3 pounds
    • 2 clove garlic, halved
    • salt and pepper
    • garlic powder
    • 1 1/3 cups brown sugar, divided
    • 1 tablespoon Dijon mustard
    • 1 tablespoon balsamic vinegar
    • 1/2 apple, sliced
    • 2 cups carrots

Directions:

  1. Sprinkle with garlic powder, salt and pepper, then prick the roast all over with a fork or skewer.
  2. In a cup or bowl, combine 1 cup of the brown sugar, the mustard, and vinegar. Rub all over the roast.
  3. Place roast in the slow cooker on top of a bed of carrots and garlic cloves, cover and cook on LOW for 5 hours.
  4. Take the remaining 1/3 cup brown sugar; Spread over the top of the roast. Place finely diced apple over atop the roast. Cover and continue cooking on LOW for 1 hour longer.
