Raspberry Biscuits and Cream Recipe

I have always loved Strawberry Shortcake for dessert. But I have to be honest my heart has always belonged to the Raspberry! I am seriously a raspberry freak! I just love those sweet, tasty little berries! So of course I had to make my own version of a “Raspberry Shortcake”. The only thing is…I don’t use shortcake…I use homemade biscuits instead! Num Num Good šŸ™‚

Ingredients for Biscuits
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1/4 teaspoon baking soda
6 tablespoons unsalted butter
3/4 cup cold buttermilk

Directions
Preheat oven to 425 degrees F.
In a large bowl whisk flour, baking powder, salt, and baking soda together.
With a fork carefully cut in butter into flour mixture (should resemble a crumbly mixture).
Slowly pour in 3/4 cup buttermilkĀ and mix until just combined (do not over mix or handle).
Take a large spoon and drop even amounts of dough onto a lightly greased pan.
Bake for 10-12 minutes orĀ until browned.

Romanoff Sauce: Ingredients

1 1/2 cups sour cream
3 TBSP brown sugar
1 tsp cinnamon

Add all ingredients together in a small bowl and set aside.

Constructing your dessert!
***Using approx 3 cups of raspberries and 1 TBSP sugar.Ā 

  1. Using fresh raspberries or frozen raspberries, add 1 TBSP of white sugar and mix.
  2. Take one homemade biscuit and cut in half. Place the bottom piece in the bowl first. Cover with one heaping spoonful of raspberries. Add another heaping spoonful of Romanoff Sauce on top of raspberries.
  3. Place top piece of biscuit on top of berry mixture and add a little more raspberry mixture and romanoff sauce to the top for good measure.
  4. Serve with a side of whipping cream or vanilla ice cream and enjoy!!!!
