In celebration of #EarthDay and wanting to keep our earth, environment and especially my family as healthy as possible I thought I would share a recipe for one of the most simple yet effective Homemade Window Cleaners out there! I love this recipe! Even more I love that it costs me close to nothing (maybe $0.40 a bottle) and is completely chemical free. Weekly Meal Plan…Yummy!!!!
Ok here we go…I am excited to get back to posting my weekly meal plans…it is not only for you…but it also helps keep me on track with my weekly meal budget! Now I only post meals for Monday through Friday, because I expect most people have plans on the weekend or can eat left overs! Each meal plan and budget is planned for my family of six (I have 4 kids…3 of which eat like adults LOL)…so depending on your family size yours may cost a little more or a little less!!! Chicken Apple Arugula Feta Cheese Salad Ingredients Olive oil 1 large shallot, peeled and sliced 1 1/2 lb skinless, boneless chicken breast, cut into 1 inch cubes Salt 1 tart green apple, thinly sliced Baby arugula leaves (spinach or spring mix will work as well if you want a cheaper alternative) 1/4 cup candied pecans or walnuts, roughly chopped 1/4 cup Feta cheese – broken up into little pieces Lemon juice Salt and pepper Directions Heat stick-free frying pan to medium heat. Add a tablespoon of olive oil and lightly sauté the shallot slices until translucent. Remove from pan. Add another tablespoon of olive oil and cook the chicken breast…

Ham Bone Soup with White Beans Ingredients: 1 ham bone, with some meat still on it 1 cup ham, chopped 3 cans chicken broth 3 cups water 2 cups northern white beans 1 onion, chopped 3 stalks of celery, chopped 3 large carrots, chopped 4 cloves garlic, chopped 2 large sweet potatoes, chopped Salt and pepper 2 tbsp butter Directions: In a large pot or dutch oven pour 3 cans of chicken broth, 1 cup water and beans. Bring to a boil, then turn off heat and let sit for 1 hour. Turn to low heat and place ham bone into the pot with the beans. Add 1-2 cups water…

Weekly Meal Plan: Delicious Healthy and Inexpensive meals for your family!!!
Roasted Chicken with Potatoes and Carrots Ingredients 1 Whole Chicken 3-5 Cloves of Garlic 1 Onion Salt, Pepper and Garlic Powder 3 Sprigs of Thyme (optional) Directions: Rub Chicken with 2 tbsp Olive Oil (and or butter) and season raw Chicken with salt, pepper and garlic powder (my favorite Chicken Seasoning is Johnny’s!) Place Chicken in a roasting pan or dutch oven with 1 sliced onion, 4-5 cloves of garlic and 4-5 sprigs of Thyme (optional). Do NOT add any water to the bottom of the pan! Bake at 350 degrees for approximately 3.5 hours, add carrots and potatoes and continue cooking for another 45 minutes. Prep Time: 5 minutes …
