Monday: Homemade Chicken Pot Pie Ingredients 1 cup sliced carrots 1 cup sliced celery 1/2 cup onion 3 garlic clove minced 1 cup frozen peas and or corn ($0.75 off Green Giant Seasoned Steamers) 2 cups cooked, diced chicken breast 1 can condensed cream of chicken soup ($0.40 off any THREE Campbell’s Condensed Soups) 1/2 cup milk 2 homemade or store bought pie crusts ($0.40 off 3 Pillsbury Refrigerated Grands!) Ok here we go…I am excited to get back to posting my weekly meal plans…it is not only for you…but it also helps keep me on track with my weekly meal budget! Now I only post meals for Monday through Friday, because I expect most people have plans on the weekend or can eat left overs! Each meal plan and budget is planned for my family of six (I have 4 kids…3 of which eat like adults LOL)…so depending on your family size yours may cost a little more or a little less!!! Friday, October 7th: Brown Sugar and Apple Roasted Pork Loin (slow cooker) and Carrots Ingredients: 1 boneless pork loin roast, 2-3 pounds 2 clove garlic, halved salt and pepper garlic powder 1 1/3 cups brown sugar, divided 1 tablespoon Dijon mustard 1 tablespoon balsamic vinegar 1/2 apple, sliced 2 cups carrots Directions: Sprinkle with garlic powder, salt and pepper, then prick the roast all over with a fork or skewer. In a cup or bowl, combine 1 cup of the brown sugar, the mustard, and vinegar. Rub all over the roast. Place roast in the slow cooker on top of a bed of carrots and garlic cloves, cover and cook…

Roasted Chicken with Potatoes and Carrots Ingredients 1 Whole Chicken 3-5 Cloves of Garlic 1 Onion Salt, Pepper and Garlic Powder 3 Sprigs of Thyme (optional) Directions: Rub Chicken with 2 tbsp Olive Oil (and or butter) and season raw Chicken with salt, pepper and garlic powder (my favorite Chicken Seasoning is Johnny’s!) Place Chicken in a roasting pan or dutch oven with 1 sliced onion, 4-5 cloves of garlic and 4-5 sprigs of Thyme (optional). Do NOT add any water to the bottom of the pan! Bake at 350 degrees for approximately 3.5 hours, add carrots and potatoes and continue cooking for another 45 minutes. Prep Time: 5 minutes …

Tuesday, October 4th: Ground Turkey Tacos Ingredients: 1 package Ground Turkey Corn or flour Tortillas 1 cup chopped Onion 3 cloves Garlic, minced 1 tsp Cumin 1/2 tsp Chili Powder 1/4 cup Cilantro 2 tbsp Lime juice Romaine lettuce (optional) Sour Cream (optional) Cheese (optional) Avocado (optional) Salsa (optional) Directions: Drizzle olive oil in the bottom of the pan. Once the oil is hot, add the onion and garlic, saute until translucent, about 5 minutes. Add the ground turkey and season with cumin, chili powder, lime juice, cilantro, salt, and pepper. Friday September 23rd: Free for All or Sauteed Clams in a White Wine and Butter Sauce Ingredients: 2-3 dozon Venus Clams 2 cup White Wine 1 can Chicken broth 1/2 cup water 3/4 cup Butter White Sugar 4 cloves diced garlic 1 tbsp finely diced Fresh Oregano or cilantro 1 small lemon, sliced into wheels Baguette Bread Directions: Soak Clams in a pot with water for approx. 5 min.
