Savory Pot Roast and Cheddar Mash Potatoes Ingredients: Pot Roast (Safeway, $2.49/lb) 1/2 cup onion 3 cloves garlic, whole 1/2 cup flour 2 tbsp Worcestershire Salt and pepper 3 cups Potatoes, chopped 1 cup Cheddar Cheese 1/2 cup milk 3 tbsp butter Directions: Pat pot roast dry and rub down with flour, salt and pepper. Drizzle olive oil in a saute pan and bring to temperature. Once olive oil is hot add pot roast. Brown on all sides for about 2 minutes on each side. Ingredients: 2 cups frozen corn (I am using corn I froze from this summer!) 2-3 stalks of celery, chopped 1 cup finely chopped onion 2 cloves garlic, finely chopped 1/2 cup Sweet Red Pepper 1 cup potatoes, chopped 1/2 cup carrot, chopped 5 slices of bacon, cut into 1/2 inch pieces 1 pint 2% milk or Coconut milk (unflavored) 1/2 cup butter 3 tbsp flour Sour cream (optional) Cheddar Cheese (optional) Directions: Saute diced bacon over medium heat until just before crispy; remove bacon and place on a paper towel. Dinner tonight is gonna be one of my favorites…Homemade Cream of Mushroom soup!
Cream of Mushroom Soup Ingredients 1/2 cup chopped onion 2 tablespoons butter 3 cups sliced fresh mushrooms, portabella tastes best! (great price at Costco or Safeway) 6 tablespoons all-purpose flour 2 (14.5 ounce) cans chicken broth 1 cup half-and-half cream 1/2 teaspoon salt 1/8 teaspoon pepper Directions In a large saucepan, saute onion in butter until tender and transparent. Add mushrooms and saute until tender. Add flour to create a rue. Stir broth into the mushroom mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. Stir in the cream, salt and pepper. Simmer, uncovered, for 15 minutes, stirring often.

Country Style BBQ Pork Ingredients: 3-5 pounds Pork Shoulder Country Ribs (Great price at Safeway this week!) 1 bottle of your favorite BBQ sauce 4 cloves garlic, whole Salt and pepper Directions: Pre-heat oven to 350 degrees F. Place pork in a large pot of water with 3 cloves of garlic and boil for approximately 45 minutes. Drain water and place pork in a baking dish and slather generously with BBQ sauce. Cover with foil and bake for 45 minutes. Prep. Time: 10 minutes Cook Time: 45 minutes Difficulty: Easy

Ground Turkey Burgers with Cilantro and Feta Cheese Ingredients: Ground Turkey (Super cheap at Safeway this week! See the deal HERE) Feta Cheese 1 bunch of Cilantro 1/2 cup finely diced Onion (preferably a sweet onion) Directions: Dice 1/2 cup onions. 1 cup Cilantro and 2 cloves garlic. Mix the above mixture and 1 cups Feta cheese into the ground turkey. Make sure to really mix it well! Season with salt and pepper. BBQ until fully cooked. Roasted Veggies and Chicken Ingredients 3 large thighs or chicken breasts (I prefer dark meat) 2 cups asparagus, cut into halves 1 cup broccoli florets 1 cup cauliflower, cut into bite size pieces 2-3 white or red potatoes, halved (quartered if large) 1/2 onion, chopped into large pieces 2 tbsp olive oil 2-3 cloves garlic, diced Kosher Salt and pepper 1 cup parmigiana cheese (optional) (Vegetables you roast are optional, I chose veggies that are currently in season and at their lowest cost!)
